Fragrant and tasty cheesecake with strawberries

Today there are many cheesecake recipes. At the heart of each of them - a delicate curd soufflé, laid on a thin crusty cake. The taste of cheesecake can be complemented with fragrant jelly, chocolate, almond crisps, fresh or canned fruit. A special niche among curd desserts is cheesecake with strawberries, combining a soft curd taste with a rich aroma of ripe berries. In addition, he is simply amazingly beautiful!

Cheesecake with strawberries is not just a dessert. This dish is worthy of the most solemn feast. It is served to the table at the most exquisite events, it is the hallmark of the best confectioneries and bakeries. Therefore, it is not worth saving on the quality of products. For its preparation, choose the most ripe and sweet strawberries that we can get. The same high requirements will be presented to the cheese curd: take the freshest home curd and mascarpone from the manufacturer with a good reputation.

Approximate proportions

For the cake:

  • Slightly less than half a cup of chopped unsalted pastry. In order to make a cheesecake with strawberries, crackers are perfect.
  • A tablespoon of sugar can be white, preferably brown, or a mixture of these.
  • 4 tablespoons of melted butter.

For filling:

  • About 800 g of soft curd or cream cheese, cheese mass or creamy cottage cheese. A soft, non-fat home-made cottage cheese will do, but it will have to be broken with a blender.
  • One and a half cup of sugar.
  • A quarter of a glass of starch, better than corn.
  • A teaspoon of vanilla sugar.
  • 2 large eggs + 2 egg whites.
  • Half a glass of thick cream or homemade sour cream.

For cream toping:

  • 2 cups of non-acid sour cream.
  • Half a glass of sugar.
  • A little vanilla sugar (to taste).

For strawberry decoration:

  • 700-800 g of fresh strawberries.
  • 2 cups of strawberry jelly to decorate cheesecake.

Recipe: cottage cheese with strawberry cheesecake on crispy corn

First we'll go to the cake. Preheat the oven to 180 degrees. We put on the bottom shelf a bowl with hot water. The detachable baking dish is covered with foil, which we moisten with vegetable oil. Crackers grind in a food processor or press a thin rolling pin to get a little crumb, almost sand. Mix all the ingredients for the cake, distribute the resulting mass over the surface of the mold. And we begin to prepare the filling. We beat cheese (cottage cheese) in the combine , add sugar and starch, again whisk at low speed. Add the rest of the ingredients, whip the last time. Pour the filling into the prepared form over the cake, bake about 60-70 minutes. While cheesecake is baked, we prepare creamy toping. To do this, stir the cream with the usual and vanilla sugar until complete homogeneity. To the baked cheesecake we shall allow to cool down a little and from above we will put a creamy mass. We will send again to the oven for 7-9 minutes, so that the top will blush. Turn off the oven and, without opening the door, let the cheesecake cool.

How to decorate cheesecake with strawberries

First of all, we are talking, of course, about the berries themselves. They need to be washed and cut with a sharp knife on the lobules. Gently spread on top of cheesecake and pour freshly prepared thick strawberry jelly, distributing it with a culinary brush. Before serving, the dessert must be allowed to brew until the jelly is completely solidified. All cheesecake curd with strawberries is ready!
