Lenten food in Lent, beginning 49 days before the Easter Resurrection, consists mainly of vegetables and fish, except for the 7th, 4th and 1st weeks.

Not everyone knows, but favorite by many first dishes, hodgepodge and cabbage soup, you can cook without meat and butter, and the lean food from it will not lose its taste and aroma.

Solyanka

One day before cooking, soak 0.5 tbsp of red beans, cook it for a half to two hours in salted water. When the beans are ready, leave the broth for the saltwort, and put the beans separately in a deep saucer. Cut 1 onion medium sized cubes. 2 pickled cucumber peel, cut into cubes. Onion a little fry, add cucumbers and continue frying along with onions. Vegetables toss in boiling bean broth and add 1 tablespoon tomato paste. Remove the olives from the jar, cut into slices and, when the potatoes are half ready, add to the pan together with the laurel leaf and two peas of sweet pepper.

Shchi

In 3 liters of boiling water add 6-7 pcs. Cut into cubes of potatoes, add to taste. After 5-7 minutes add shredded cabbage (a small head), 1 piece of sweet pepper, cut into cubes. While cooking vegetables, fry in a frying pan a small carrot, onion and grated tomato. When the potatoes and cabbage are cooked, add the dressing, laurel leaves and 3 peas of black pepper to the pan. Serve with finely chopped parsley and grated garlic.

Second courses

Add pepper and salt to taste and simmer under the lid on a small fire for 20 minutes. If the water does not evaporate during this time, cover again and cook until done. Top sprinkled with chopped herbs.

Mashed potatoes

One and a half kilograms of potatoes must be cleaned and boiled. Pour the potato broth into a jar. Finely chop the onion head medium size, fry in sunflower oil until golden brown. Peel potatoes, if the puree is very thick, add potato broth. Add the onions and serve them to the table.

Salad dressing

Lenten food in Lent assumes a predominance in the diet of vegetables, so vegetable salads will be very relevant in this period.
