Fresh whole milk, as a rule, has a fat content of 3-6%. From it, by special processing (separation), the cream is separated. The amount of fat in them is from 8%. And the reverse is the liquid that has separated as a result of processing, that is skim milk. It has a white translucent appearance. But we can not say that there is no fat in this product. He is, but in very small doses - up to 0.5%.

What is made of skim milk?

In agriculture, they are used to feed young pigs and cattle. Of course, it is inferior to whole milk in the nutritional value, but, thanks to the low content of proteins in its composition, it is easier to digest and assimilate.

Reverse is a product that is used in the production of dry and condensed milk. It is also used in the manufacture of low-fat yogurt and kefir. Light and air is obtained from it cottage cheese. How to make it at home, is told in the next part of the article.

Cottage cheese from the reverse: recipe

3 liters of milk, passed through the separator, pour into a saucepan and put on fire. After boiling, cook it for a quarter of an hour. Then cool the milk in a cold water bath (up to 30 degrees). After putting the product in a warm place and leave it to sour naturally without the use of any starter. When a thick "cap" appears on the workpiece, and the whey under it, it's time to make the cottage cheese. To do this, pour the liquid onto gauze, suspended above the pan. Allow the serum to drain, and put a bag of cottage cheese under the yoke for an hour. After transfer the product to the sundeck with a lid. Delicious and healthy cottage cheese is ready. In this product, the fat content is about 4%. Keep it in the refrigerator for no more than 2-3 days.

From such cottage cheese it is possible to prepare various dishes: casseroles, creams, fillings for pies, vareniki, pancakes. It is very useful to eat it fresh. To diversify the taste, you can add a little honey or homemade jam.

As you can see, the reverse is also a valuable dairy product. For people who are recommended diet food, it is simply indispensable in the preparation of low-fat billets.
