It seems to many that a charlotte on sour cream with apples is the simplest and quickest thing you can cook if you find out about the arrival of guests fifteen minutes before their appearance. "What's wrong with that?" You ask. We cut apples, cooked the dough for five minutes, mixed it and - into the oven! However, few know that a charlotte with apples on sour cream has its own rich history, according to which it was started in France several centuries ago.

The magnificent dessert Charlotte could be made using fruits, liquor, white bread, sugar and cream. It was a great pie, for baking it took a lot of time and effort.

There are two versions of the origin of the name "charlotte":

  • From the Old English charlyt (sweet dish with cream);
  • The name was associated with the name of Queen Charlotte, who was very fond of apples.

At the beginning of the nineteenth century, a similar Russian dessert appeared for the first time - Charlotte Russe. It was baked by the French cook Maria Antoannette Karem, who cooked at the palace of Alexander I. Judging by what the famous culinary specialist from Paris Auguste Escoffier wrote about this cake, she did not get a charlotte on sour cream with apples, but rather a dessert similar to " Ladies' fingers, which even served with a ball of ice cream and fruit.

Let's try to bake an interesting kind of apple pie "Charlotte on sour cream with apples". It is prepared using a saffron baking powder, which is best suited for giving a unique flavor to the dough. So, let's proceed to the preparation of such a wonderful pie, like a charlotte with apples.

Recipe

  • Sour cream - 200 g.
  • One egg.
  • 150 g of sugar.
  • Vanillin - 1/4 tsp.
  • 200 g of flour.
  • A half-pack of baking powder.
  • 1 kg of apples.
  • Cinnamon (one sachet).
  • A little dried ginger, a little nutmeg and cardamom.

All this we need to create a delicious dessert.

Preparation

Eggs must be thoroughly beaten with sugar: proteins - separately before the formation of foam, yolks - separately, until they become thick by consistency. Next, add the sour cream, while still whisking. We pre-sieve the flour before it becomes more airy, mix it with a baking powder and add it to the egg-sour mixture. The dough should be thick enough, but pour at the same time. Apples should be washed, but not cleaned, cut into medium slices, poured with cinnamon, mixed with small amounts of ginger, cardamom, nutmeg (you need to carefully consider adding spices, most importantly, do not overdo it!). Half of the dough is poured into a greased form, we evenly top out the apples, pour the remaining dough and pour out the apples again.

We put it in the oven, preheated to 180 ° C. Bake for 25 minutes, we check the readiness with a toothpick or match.

In general, a charlotte on sour cream with apples can be prepared in many ways, there are now a lot of them, it is probably impossible to count, but all of them will have something in common, besides each mistress brings in cooking something of her own.

Dessert is served in a hot form, you can add an ice cream ball to it.
