Delicious borsch without meat

Scientists, investigating the reason for the liveliness and vivacity of Ukrainian women, conducted a number of studies and found that the matter lies in their diet. It includes in sufficient quantities the following components: beets, garlic and homemade fat, which are often present exactly as borsch components. The last ingredient we miss because of its high caloric value, but about the useful properties of beet need to say a few words.

This vegetable perfectly displays radionuclides, contains betaine, which supports the work of the liver at a high level and prevents the development of atherosclerosis. There are a lot of vitamins and folic acid in the beet, so it is especially useful to women. In order for borscht of beet to be as dietary as possible, it can be cooked without meat broth.

When we think how to cook borscht without meat, we often have to orientate ourselves to the appropriate time of the year. On cold days, food should be hot and caloric. For winter, borsch is best without meat and beans. For its preparation take a saucepan for 3.5 liters (some cook right away 5, because standing up, it only becomes more delicious). You will also need 0.2 kg of beans, half cabbage of small size, 5 potatoes, a pair of small carrots and bulbs, 2 medium beets, 100 grams of tomato paste, salt, garlic cloves, vegetable oil.

Beans are soaked overnight and boiled until 2/3 ready. In this broth is added potatoes, diced. The mixture is boiled, after which cabbage is added. Half-cooked cabbage and potatoes are added to the roast. To cook it, the onions are finely chopped and fried, and grated carrot, tomato paste, is added to it. Borsch left a little puck, and in the meantime, the beets are rubbed on the grater and added to the soup 10 minutes before the end of cooking. The dish is salted to taste, garlic and greens are added to it. Delicious and nutritious borsch without meat is ready.

Dishes for hot summer can be served in a cooled form. And in this case borsch without meat can have a very original taste. For example, you can take 0.4 kg of beet and boiled potatoes, two eggs and fresh cucumber, 75 grams of green onions, 2 tablespoons of sour cream, a teaspoon of sugar, vinegar and salt - to taste. Beets are cut into small cubes, filled with two glasses of water, a teaspoon of vinegar is added to the liquid, everything is cooked for about half an hour. The broth is filtered, cooled. To the vegetable other small-cut components are added, which are then poured with beet broth. Before serving, grated horseradish, sugar, mustard and sour cream are added to the borsch.

In Lithuania borsch without meat is prepared using such a useful fermented milk product as kefir. For this soup taken half a liter of kefir, 0.4 kg of boiled beets, 300 grams. Boiled water, one egg, dill, salt, green onion to taste. Kefir is beaten with salt and boiled water, it is introduced shredded beets, dill, green onions. When served on the table, a crumbled egg and sour cream are added to this dish. Accompanying to such soup is often warm boiled potatoes.

Other recipes of dishes without meat from beets are not less tasty and useful. For example, a delicious snack is a beet salad with garlic and nuts. Four four-table beets of medium size are taken with four tablespoons of mayonnaise, a teaspoon of fruit vinegar, a glass of walnut kernels or pumpkin seeds, a slice of garlic. Beets are boiled, cooled, rubbed on a large grater. Nuts are ground, garlic is rubbed. All components of the salad are mixed. When serving the dish, you can decorate with a sprig of greenery and additionally water mayonnaise.
