Chopped cake: history and cooking secrets

Chopped cake is a very popular dessert. It is prepared in different countries already a long time ago. If you believe the old culinary books, the history of the recipe is estimated for centuries.

Today under this name come across different recipes. But they undoubtedly share common features.

An ancient recipe: why the cake is chopped?

The answer to this question must be sought in the sources. Cookbook "Model kitchen", published in 1892, explains that in those days there were several popular recipes for the test: puff, yeast, chopped and others. Chopped dough was used not only for the preparation of cakes, but for other types of baking. Its name is its manufacturing technology. Butter butter finely chopped with a knife, mixing with flour. Today, chopped cake is cooked according to the same technology.

Necessary ingredients

To prepare the cake use different ingredients. All of them are available, they can be easily found in any store. Chopped cake, the recipe of which came from a long time, is prepared from such a set of ingredients:

  • Butter - 10 tbsp. L .;
  • Flour - 400 g;
  • Water - 5 tbsp. L .;
  • Egg - 1 pc.

Cooking process

Cutting oil can be a conventional knife or special cut. This can be done on a wide wooden board or in a bowl with a low lip. Rub and grind the butter until the crumb becomes shallow, like croup. Gradually mix the flour. When the crumb absorbs all the flour, sweep it all down the hill, make a hollow, hammer an egg. Again, thoroughly rub, start pouring water. You may need more or less than five spoons, the dough itself will take as much as necessary.

Divide the dough into several parts, wrap it in a film, put it in the refrigerator for at least 30 minutes. Then take the pieces one at a time, thinly roll them to the size of the mold. Bake in a preheated oven. The crusts are baked very quickly! You will need no more than 4-5 minutes to make one. Stack the cakes in a pile. Before the next stage they must completely cool down.

Cream

What kind of cream to use to decorate chopped cake? The recipe for preparing the cream can also be borrowed from old sources. For this cake, a classic cream of whipped condensed milk and butter is excellent.

To make it, pour into the whipping container 1 can of boiled condensed milk, add a packet of butter, melted to room temperature. Whisk the mixer until smooth. The cream will turn out dense and fragrant, and at beating will get beautiful golden color.

Cake with mascarpone

Italian mascarpone cheese is ideal for making desserts. It is often used for making creams, stuffing for cakes, ornaments. Very well combined and chopped cake with mascarpone. The recipe for preparing a classic cake can be supplemented with the following cream.

Whisk 250 g of mascarpone cheese with a mixer, pouring powdered sugar (only 100 g). Add 2 spoons of any flavored liquor and a pinch of vanilla sugar. You can create an accent with a small amount of lemon juice.

This cream is great for intercalating the cakes. It holds the form well, so it can be used for decorative purposes. Pull off the syringe cream with mascarpone on the surface of the cake, creating different elements to your liking.

How to decorate

If you give the cake soaked with cream even within a day, the taste of the cakes will surprise you. They will not get wet and will not soften, they will remain crispy. This is one of the main features of this dessert.

The cake is perfectly in shape. It can be decorated not only with cream, but also with pieces of fruit, grated chocolate, candy. Its smooth surface can be filled with chocolate glaze. Cook the glaze in advance, even before you cook chopped cake at home. The recipe with milk is perfect for this dessert:

  • Milk - 3 tbsp. L .;
  • Butter - 50 g;
  • Cocoa - 5 tbsp. L .;
  • Sugar - 3 tbsp. L .;
  • Vanilla - to taste.

Boil the milk, melt the oil in it. Add all the loose ingredients and allow them to dissolve. Wrap the icing on a small fire until it becomes smooth and uniform. Cool before use.

Such different chopped cakes

Some apply the name "chopped cake" to other desserts, most often to home "Napoleon" and cake "Stretch-Rastrepka."

A small change in the basic recipe leads to new tastes. If you liked chopped cake, you can experiment by adding cocoa, flavored alcohol, cinnamon and other ingredients to it.
