Celery puree soup, salmon or asparagus

A nutritious and high-calorie dish, called soup-mashed potatoes, is prepared from mashed vegetables, meat, cereals, fish or poultry.   • 3 cups of sliced celery leaves.

  • 1 cup low-fat cream.
  • 2 cups of milk.

Boil the celery in chicken broth and water over a low heat for ½ hour, then turn into a blender in a homogeneous mass. Onion until tender, fry in oil, add flour and milk, cook on low heat until thick. Transfer the sauce to the celery, pour out the milk and cream, season with salt and pepper, once again, whisk, bring to a boil.   • 1 liter of broth chicken.
  • 3 medium bulbs, peeled and cut into cubes.

  • 2 cups of milk.
  • ½ cup tomato puree.

  • Freshly ground white pepper.

Salmon is cleaned and cut into pieces, set aside. In a pan with melted butter, add onions and garlic, fry for several minutes, pouring flour, constantly stir. You can cook soup-puree from asparagus, for 10 portions of which you will need products:

  • 4 cups of chopped yellow onion leaves.
  • 8 tablespoons creamy butter.
  • 2 kg of asparagus, remove the wood part with a length of 2.5 cm and cut the rest into the same pieces.
  • 2 liters of broth chicken.
  • ½ cup of cream or kefir (if cold soup is made).
  • Salt
  • Freshly ground black pepper.

In a large saucepan, put onion in oil for about 25 minutes (until soft), often stir. Add the chicken broth when everything boils, throw the asparagus into the pan, cover it, reduce the heat and cook for 45 minutes or until the asparagus becomes very soft. The whole soup is mixed in a blender, pour the resulting mashed potatoes into a saucepan and cook for about 10 minutes. Hot soup is seasoned with salt and pepper and served to the table. If you prepare a cold soup, then cool it, add cream or kefir, salt and pepper, mix and put in the refrigerator. They serve very cold.
