Celery soup: a simple recipe

We always think in advance about the dinner table menu. We want everything to be original, beautiful, tasty, and most importantly, useful. Modern cuisine is very rich and diverse, and I want to try everything by all means. But not always all heavy products are useful for our body. Therefore, recipes for light, delicious dishes are very popular now.

We suggest preparing you soup from celery. It is easily digested, so getting up from the table, you will not feel heaviness in the stomach, as is usually the case after consuming fatty foods. The plant itself celery burns fats and gives the body energy, not calories. Celery has a rejuvenating, firming and cleansing effect. Various salads are prepared from it, it fits well with meat, fish, mushrooms, seafood. The recipe for this soup can be included even in the strictest diet. Soup of celery is nourishing and most importantly useful.

Use the following ingredients:

  • 1 chicken;
  • 3-4 potatoes;
  • 7-8 stalks of green celery (200 grams);
  • Broccoli cabbage (not more than 200 gr.);
  • 1 carrot;
  • 100 grams of champignons;
  • 1 clove of garlic;
  • 1 onion;
  • Salt and pepper to taste;
  • wheat flour;
  • 2 glasses of milk (medium fat content) or 1.5 tablespoons. Cream;
  • Bay leaf.

We prepare a cream of soup from a celery in stages.

In advance, make crunches. Thanks to them, your celery soup will become more delicious and unusual.

For this recipe, we will need chicken broth. Cook the chicken in a pot with a capacity of at least 3 - 4 liters, then add salt, pepper to taste and 2 bay leaves. The hen will cook for about an hour. During cooking, do not forget to remove the foam with a spoon. To check the readiness of the chicken, pierce the meat with a fork. When it is cooked, pull it out onto the plate and remove the skin.

Cut 4 small potatoes (medium size) into small pieces, chop the green celery (about 7 to 8 stems), celery root and broccoli (you can frozen). Cut vegetables into a boiling chicken broth and cook for 15-20 minutes over medium heat.

While the vegetables are boiled, cut an average bulb, 100 grams of champignons slices, 1 slice of garlic and grate 1 carrot on a small grater. Put all these vegetables in a frying pan or in a cauldron. When they are ready, add a tablespoon of flour (wheat). For 2 minutes stir vegetables on low heat.

Then you need to add to the vegetables 2 glasses of milk (medium fat) or 1.5 cups of cream. When the resulting mixture boils, gently pour it into the chicken broth with vegetables. Soup of celery should be cooked for about 5 minutes on a small fire, stirring constantly.

After 5 minutes turn off the soup and let it cool.

Now we need the help of the blender. We skip our soup of celery (completely or in parts) through a blender, to the state of a mild puree.

Now it's time to remember the chicken on which our broth was cooked. Cut off about 300 grams of cooked meat and pass it through the blender along with the cream soup. The resulting mass is poured into a saucepan and cook again for 2 minutes on a slow fire. All this time, do not forget to stir the soup.

When serving, you can decorate the soup with parsley or dill. Put in each plate a few crackers - they will be a wonderful crunchy addition. Now you know how to make soup of celery, which will pleasantly surprise you and your children.
