Cabbage for the winter - tasty and useful

The traditional occupation of many Slavs in the autumn period is the salting of cabbage for the winter. Previously, this was done in large wooden barrels, so that more than enough for the entire autumn-winter period. Now, of course, use smaller containers. But how nice to try crispy and delicious cabbage, as a supplement to steaming boiled potatoes! Cabbage for the winter is prepared in a variety of ways. It can be a traditional salting or a tasty salad with different ingredients.

The first recipe for salad from cabbage and apples is very tasty and unusual. For its preparation you need to take about 5 kilograms of this vegetable. We carefully shred him thin long strips. Carrots (3 kilograms), onions (about 3 kilograms), 3 kilograms of apples and the same amount of Bulgarian peppers should be cleaned and washed.

Then cut the carrots and sweet peppers into thin strips. Bow must be cut into half rings. Vegetables should be put in a large container and add to them 3 tablespoons of salt. All carefully mix, but do not press (the appearance of the juice is not necessary). We prepare banks, mine and sterilize them. In each container we put about three peas of pepper, a laurel leaf and a tomato, cut into slices. Then add the sliced apples to the vegetable mixture and put it in jars. Top with covers and put sterilized for about 30 minutes. Then roll up the jars and leave to cool. When cabbage for the winter will cool, move it to a cooler place.

There are other ways of cooking. Marinated cabbage for the winter also turns out delicious and crispy. To do this, take 5 kilograms of vegetables and chop it in small strips. Also, we clean one kilogram of onions, one kilogram of carrots and sweet pepper. Prepared vegetables should be chopped and poured with marinade.

For its preparation we take two tablespoons of sugar and table salt. Salt we take a coarse grinding, which is best suited for blanks. Also add to the marinade half a liter of vegetable oil and two-three cups of table vinegar. Fill the marinade with chopped vegetables and put them into cans. Cabbage for the winter, cooked according to this recipe, does not require rolling up with metal covers. You can simply close it with a plastic lid and put it in a cool place. It can be used on the third day.

Cauliflower for the winter is harvested in such a way that it retains all the vitamins. For this, frost is best. We take cabbage and place it in cold water for 20 minutes. This is necessary to remove insects that may be inside. Then we disassemble the cabbage on the inflorescence. Boil the water and add a little citric acid to it, so that the vegetable retains its original color. We lower into the boiling water inflorescence and cook for about 3 minutes. We put them in cold water and quickly cool. Use a colander to make the glass liquid, and then spread the cauliflower on the towel. Let it dry completely. After that, we shift the vegetable into a freezer or a bag. We send everything to the freezer. In winter, we use it for our intended purpose.

Cabbage for the winter can be prepared as follows. Take three kilograms of this vegetable, one kilogram of carrots, onions and sweet peppers. All finely shred. Spread out into a spacious container and mix. We prepare the fill. Mix 4 tablespoons of salt, 250 grams of sugar, a glass of vinegar and vegetable oil. Pour marinade cabbage and leave for a day in the room. You can mix it during this time. Then we send cabbage to the cold. You can put it in a jar and store it in a cool place.
