Sour cream sauce

Each sauce is prepared for a certain dish. Its ingredients should be combined with products whose taste it should enrich and improve. Sauces can be divided by the way of preparation for cold (products are not subjected to heat treatment) and hot (heat treatment of ingredients is used). They can also contain or not fillers in the form of flour or starch.

The liquid base is usually oil, milk, cream, water or sour cream, for example, when preparing sour cream sauce for meat. As additional ingredients include spices and seasonings, thanks to which the taste of the sauce itself is adjusted, which will be transmitted to the main dish. In addition, given a certain color, which allows you to make a culinary dish.

The sauce can be basic, as well as derived from the main, to which a specific set of products is added. In this way, you can get sour cream sauce for fish, for pasta or vegetables.

Recipe 1

The main sour cream sauce is prepared from sour cream and flour. It is suitable for preparing various options. It will take ingredients:

  • 2 tablespoons flour;
  • 5 glasses of sour cream;
  • salt.

In a saucepan bring to a boil 4 glasses of sour cream. By this time, warm up the frying pan, pour a thin layer of flour onto it and stir it until it is dried (it will become crumbly, but does not change color), about a minute. Then it is poured into the remaining cold sour cream, mix and pour this mixture into boiling sour cream. Add salt and, stirring, cook for minutes. 3. Filter through a fine sieve. Serve with meat fish or use for more complex sauces.

Recipe 2

Brew sour cream sauce with tomato puree and paprika. It can be used for dishes from beef, veal, poultry or mutton. Ingredients:

  • 2 ½ cup sour cream sauce (prepared according to prescription 1);
  • 50 g of tomato puree;
  • 30 g of creamy salted butter;
  • ½ teaspoon of tea paprika.

In the saucepan, heat the oil and spread tomato-puree, mix. Add paprika, salt and sour cream sauce. Boil for 5 minutes and filter through a fine sieve.

Recipe 3

Sour cream sauce with mushrooms is suitable for baking vegetables, potatoes. It can be served with fish and meat dishes. For preparation, products will be required:

  • 1 cup (thin) of sour cream;
  • 1 teaspoonful of tea with a hill of flour;
  • 1 onion, cut into small cubes;
  • 1 tablespoon buttery cream salad;
  • 1 glass of champignons (cut finely);
  • salt;
  • pepper.

The flour is spread in a frying pan and poured into a saucepan, in which sour cream is already brought to a boil. Continuously stirring, boil on low heat. Separately fry in the onions, add mushrooms, fry them until soft and spread into the sauce. Stirring, cook for 3 minutes on low heat. Season with salt and pepper.

Recipe 4

Sour cream sauce, cooked with horseradish, comes to corned beef, boiled meat or can be used for baking meat in the oven. Ingredients:

  • 2 cups of basic sauce (according to prescription 1);
  • 1 tablespoon buttery cream salad;
  • 1 table spoon of vinegar ;
  • ½ cup shredded horseradish root;
  • 6 peas of pepper;
  • salt;
  • Bay leaf.

Horseradish slightly passeruyut in oil (the color should not change), throw peas of pepper, bay leaf, pour vinegar and boil. The mixture is added to the hot sour cream sauce, seasoned with salt and cooked for 7 minutes.

Recipe 5

For fruit salads, sour cream sauce is also excellent. Prepare it in a cold way. Ingredients:

  • 1 cup low-fat sour cream;
  • ½ cup orange juice (can be replaced with lemon or berry juice);
  • 1 tablespoon table zest of orange or lemon (before very finely chop, it is scalded with steep boiling water);
  • 2 table spoons of sugar;
  • ¼ teaspoon of tea (or less) salt.

Sour cream in a blender is mixed with fruit juice, add zest, sugar, salt and mix everything again.

Recipe 6

Cold sour cream sauce can be used for dressing vegetable salads. To prepare it you will need the ingredients:

  • 1 cup low-fat sour cream;
  • ¼ teaspoon of lemon citric acid;
  • ½ tablespoon of tea sugar;
  • 2 tablespoons of boiled water;
  • pepper;
  • a pinch of salt.

Citric acid is dissolved in water. In sour cream put sugar, salt, pepper and mix. Combine sour cream with a solution of citric acid.
