Pie with cabbage - a family dish

The tradition of baking pies with filling appeared many decades ago in Ossetia. But it should be noted that such dishes were prepared in families only on holidays. Although in the daily life of such pies also baked, but it was very rare. Ossetian pie with cabbage was able to cook in every family. With the recipes of the pie, with the preparation of the dough and the filling, each culinary little improvised at his discretion, but the essence did not change, and the dish came to our days, remaining one of the most popular and desired on any home table.

According to tradition, on the festive table it was necessary to put three pies of different kinds at once, and it is not hard to guess that one of them was a pie with cabbage. The recipe for its preparation quickly migrated to Russian families. It is worth noting that a pie with cabbage for lazy people is just a myth, as in fact it requires a lot of hassle and patience.

To prepare the test, you need the following ingredients:

- Milk - 500 ml;

- fresh or dry yeast - 50 g;

- sugar - from 1/2 to 3/4 of the item;

- Butter - 150 g;

- salt - 2 teaspoons;

- vegetable oil - 50 g;

- egg - 1 piece;

- Wheat flour - 1 kg.

Valuable will be that pie with cabbage, where there will be a thin layer of dough and juicy, and most importantly, a delicious filling. It is necessary to warm the milk to a warm state. Closer to the end of the batch, you should add melted butter and vegetable oil in advance. Make sure that everything is well etched.

Then leave the dough for one hour. Do not forget that you did not add fat to the dough. It is best to do this manually after mixing the other ingredients, so the dough turns out to be much tastier. First, dissolve the yeast in warm milk (not hot). Then, use sugar, egg, salt, whisk the resulting mass with a whisk. Remember that oil and flour have not yet been added. Five minutes to spend on the fact that all the mixed ingredients "played".

At this time, sift and weigh one kilogram of flour. Next, knead the dough, it is best for such a process mixer, and let the mixture stand up. At this time, melt the necessary amount of oil and pour everything into the dough, while stirring. As a result, the dough should turn out to be gentle. It may seem at first glance that the dough will stick, but in fact this is far from the case. Place the container with the test in a bag and put in a slightly heated oven (degrees to forty). At the same time, the oven must be switched off.

At a time when the dough for cake is fermenting, you can easily begin to make the filling.

To do this you will need a small cabbage head. Finely chop the vegetable and put it in the saucepan. Preliminarily add a small amount of oil and add cabbage, so that it gives juice. Add a little sugar, pepper and cook until soft with a cover that is not completely covered. In order to make the pie with cabbage more delicious, you can add a pinch of chopped dill and chopped eggs to the filling. It turns out a fairly successful combination. In fact, there are a lot of options for filling, you can improvise here with both the products themselves and with your favorite spices. Everything depends on the preferences of household members and guests, as well as the skills and fantasies of housewives. Make a pie with cabbage the way you want it to be.

Leave the cake for half an hour on the table, during which time it will rise slightly. Before placing the product in the oven, grease the surface with a mixture of eggs and one teaspoon of water. The oven should be warmed up to 180 degrees. Bake for 17 to 20 minutes.

It should also be noted that it can turn out a good pie with sauerkraut if it is used instead of fresh, but this dish is for an amateur, the taste of the filling and the pie will be quite different.
