Did you know that pancakes were baked even when Christianity was not in sight? This pancakes are now associated with the Carnival, which is preceded by the so-called "passion week" - a very strict fast, when only dairy products and eggs are allowed. But then the real pancake expiration begins!

Before the time of Christianity, pagans baked pancakes and bread to appease the gods and to commemorate the souls of the deceased. In our time, pancakes can be attributed to the national treasure, because with such a scale as in Russia, they are not baked anywhere in the world.
Needless to say, that pancakes are different, with different fillings - it's pancakes with mushrooms, with potatoes, sour cream, pancakes with radish and even with nettles, berries and many others ...

To describe all kinds of types and recipes, one article and even a series of articles will not be enough - at the moment there are published culinary collections devoted specifically to the traditions of Russian baked goods and pancakes, in particular. We'll talk about such a wonderful treat as pancakes with mushrooms, as mushrooms are especially pochyaemy in Russian cuisine.

First you need to answer the question, which mushrooms are best used. In principle, any edible will do, choose those that are among your pets. However, champignons are traditionally used for mushroom filling .
Mushroom filling can be wrapped directly in them. Then you get a tube - this is the most common option in European countries and the US, but you can do a little differently. Pancakes with mushrooms, the recipe of which you can read below, are prepared very easily.

We need flour (about 200 grams), a couple of eggs, a half tablespoons of sugar, a little salt and soda, half a lyre of milk, 4 tablespoons of vegetable oil (you can take olive).

The filling will consist of mushrooms, vegetable oil, pepper and salt. On top, you can pour our pancakes with mushrooms sour cream or melted cheese, but this is optional, but the cheese will give a special taste and piquancy to the whole dish.

And now we are preparing pancakes with mushrooms. First you need to beat eggs and sugar. After that, add the milk, salt and oil to the resulting mass, mix everything and gently pour into the flour. Take care that there are no unbreakable lumps, the dough should turn out to be even and light.

The second step is to cut mushrooms and onions, then fry them over low heat until light crust appears. The filling turns out fragrant and soft. Now it's up to the little thing. In the middle of the finished bin, we pour out the filling and pack it with an envelope. The same we do with the others. From above they can be poured with sour cream or melted cheese. Pancakes with mushrooms are served on the table warm, and this is their charm, then they will melt in your mouth, and to resist the temptation to try another pancake will be very difficult!

This is a good recipe for vegetarians, but those who love more nutritious dishes, you can advise pancakes with mushrooms and minced meat. Note that, as with mushrooms, you can choose any meat , but it should not be too fat. Pancakes are cooked on their own, plus butter is added to the dough, so it's better to use lean meats. You can, for example, mix pork and beef in a one to one ratio. You can use chicken or turkey meat, especially white meat, which is good for the heart and contains few calories.

The filling for pancakes will be prepared this way - chop the meat in a blender, combining it with mushrooms. You can add vegetables. Salt and pepper to taste. Otherwise, pancakes are prepared in the same way as described above. Served on the table hot with stewed vegetables or salads.

Prepared pancakes with mushrooms, as you can see, is easy. In general, the cooking will take you no more than 20 minutes, and your loved ones will surely be satisfied.
