Mexican food. Features, traditions and main dishes

Mexican cuisine is one of the richest culinary traditions around the world. The following ingredients are used to prepare the dishes: cheese, garlic, citrus, beef, pork, fish, as well as tomatoes, corn, avocado, pumpkin, vanilla, beans, peanuts and chocolate. Food is usually seasoned with chili. As a side dish is most often used tortilla (flat tortilla) and chopped very finely lettuce. In addition, you need to take into account that in different regions there are their own, special traditions and a set of ingredients.

Mexican cuisine will become truly national only if the following conditions are met.

First, for preparing dishes you need to use special traditional utensils and do not use cutting boards or a food processor for grinding products. For this purpose, there is:

  • Molcajete - a special stone stupa for grinding herbs and spices;
  • Tejolote - pestle, after processing which all ingredients retain their rich flavor and unique taste;
  • Special press to make tortillas, corn chips, served with avocado puree, sour cream and hot sauce with salsa;
  • A small hand mill for processing dry corn;
  • Cast-iron grill-pan, in which they prepare tortillas and fry ingredients and spices for sauces;
  • Earthenware for cooking liquid dishes.

Secondly, Mexican cuisine is a meat cuisine, this product is used for filling tamales, tortillas and tachos. Semi-finished products are first boiled all over the piece, then they are divided by hands or knife into small fibers. The meat is fried in pork fat or vegetable oil, and it usually takes a very long time.

Thirdly, all dishes traditionally include tomatoes, which are previously peeled off and all seeds are removed after rapid blanching in boiling water.

Fifth, for frying garlic and onions are cooked to softness, and the greens are slightly fried until the appearance of a characteristic aroma.

Sixthly, it is necessary to prepare a lot of thick sauces, which are made very quickly.

Seventhly, Mexican cuisine and drinks are rich in seasonings and herbs. The most commonly used leaves are coriander and its seeds, crushed cumin, tea, verbena, avocado leaves.

You can choose the following dishes of Mexican cuisine, which are known throughout the world:

  • Guacamole - sauce-puree, made from ripe avocado, in which a lot of chopped garlic, tomatoes, lemon and onions.
  • Fajitas is a large wheat cake stuffed with chicken or beef with vegetables, cheese and chili sauce.
  • Enchiladas is a corn cake wrapped in an envelope, with goat cheese and chicken.
  • Taco - corn tortilla, which is wrapped with a stuffing of grated cheese, chopped brass, clams, beans, pork, beef with sour cream and salsa sauce.
  • Fricholes - a traditional dish in Mexican cooking, which is made from red beans. It is first boiled, and then thoroughly fried. Serve frecholes as the main course, or as a side dish.
  • Tequila is a strong alcoholic beverage, which is obtained as a result of distillation of agave juice. It is added to cocktails and other drinks, biting with slices of lime or lemon. Be sure to make a beaker on the glass bead from table salt.
  • Karne asada is a slice of steak cooked with seasonings, cheese and onions.

Mexican dishes have a different flavor range. They are as delicate, so sharp and piquant, often even very eater.
