It can be cooked only from vegetables and dried fruits, and you can add chicken. Tsymes Jewish is a rather fatty dish, this must be taken into account when serving. You can take different parts of the chicken. This recipe is made from wings. They need about a kilogram. Chicken wings need to be cut at the joint, washed and dried. Next, take two hundred grams of chicken fat (domestic, it is sold together with whole chopped carcasses on the market, along with giblets).

Before cooking the cymes, the fat must be melted in a deep sauté pan or frying pan. Then fry the wings in it until a golden crust appears. But it should not be too rough. Put the finished wings on the dish. In fat, continue to fry vegetables - first three large carrots (they should be very sweet, this is the feature of this dish), then two large bulbs. Together with the vegetables put in a pan for a hundred grams of washed raisins and candied fruits (lemon or orange). Fry and pour in portions apple or grape juice (it should be two glasses). By the way, lemon candied fruits can be replaced with half a lemon, which should be finely chopped and also put to the rest of the products at this stage. After the juice, add half a glass of dry wine, honey, sugar and salt to taste. Stew for another fifteen minutes, then cut three sweet apples into cubes and add to the carrot mixture. Fifteen minutes later, the fruit component of the cymes will be ready. If, during cooking, it starts to burn, then pour some more broth or juice. The mass should be thick and have a rich flavor. Remove from the fire, the dish should be sprinkled with black pepper with a pinch of red burning, and also add cinnamon, finely chopped garlic and ground coriander.

The final stage of preparation of Cymes

Prepare a wide baking sheet, cover it with foil, place the fried wings in one row. Evenly cover with fruit sauce (if it is too thick, dilute with water or broth). Then forty minutes bake in the oven under the foil. The desired oven temperature is two hundred degrees Celsius. At the end of the baking, open a sheet of foil and allow the top layer of the cyme to brown. Serve it can be hot and cold. A similar Jewish dish - esik flush - meat in sweet and sour sauce. From chicken with chicken it differs in that the beef stew for a longer time and add to it prunes, cloves, tomato paste and a slice of rye bread (and sometimes dried dried honey gingerbread).

Sweet zimes - what is it?
