The traditional soup in Italy is the minestrone. It is made from a large number of vegetables. Such soup is considered useful and rich in vitamins. The recipe for this dish includes beans, onions and greens, sometimes meat.

Today they cook not only a meat but also a vegetarian minestrone. The recipe can include all those products that were found in your home. But for a basis it is necessary to take the following: pasta or rice, white beans, zucchini, carrots, garlic, leek, onions, cabbage, tomato, rosemary, celery, salt and pepper, olive oil, parmesan. For the night, soak the beans. Squash, carrots wash, peel and cut into cubes. You can also use a green bean. These products should be fried in a frying pan in olive oil. About two liters of water bring to a boil. Add beans to it and cook for about 2 hours. After that, grind some of it in a blender. Combine the remaining beans in a saucepan with squash and carrots. Add the tomato paste (a couple of spoons), as well as pasta or rice. Cabbage chop finely and add there. Cook the soup over low heat for 30 minutes. Salt and pepper add to taste. In half an hour you will get a delicious and fragrant minestrone. The recipe provides for the use of cheese. If you are not a vegetarian, you can sprinkle hot soup with grated parmesan cheese. You can use meat broth for minestrone. The recipe is complemented with fried bacon, potatoes and mushrooms. This vegetable soup is considered dietary and is recommended for use by those who watch their weight and shape.

Minestrone - a classic recipe

Use the following set of products: carrots, zucchini, pasta, leek, beans, celery, olive oil, canned tomatoes, vegetable broth, canned beans, mushrooms, hard cheese, greens, seasonings. Wash vegetables, peel and slice. Put them out in a frying pan in olive oil. In the vegetable broth, add finely chopped tomatoes, seasonings: cumin, basil, pepper and salt. Put the vegetables in the broth. Wait until the soup boils, cook for another half an hour. Then put the beans and pasta. And for a few minutes, hold the minestrone on the fire. The recipe is very simple, despite the abundance of ingredients. Serve the soup hot. Garnish with greens and sprinkle with grated cheese.

Minestrone. Recipe with beef

For meat minestrone, take beef tenderloin, canned beans, pasta, potatoes, zucchini, tomatoes, sweet pepper, carrots, onions, garlic, seasonings, cheese. In a cauldron or thick-walled saucepan, fry beef on the oil. The meat should be cut into small pieces. Add carrots and onions to it, fry a little more. Potatoes, cut into cubes, chopped zucchini, put the sweet pepper slices into the meat. Tomatoes grind, add spices to taste. Stew for another 5 minutes, stirring. Depending on how much soup you want to get, add the right amount of water. Bring the minestrone to a boil. Add the beans from the jar, pour the pasta. Wait until they are ready. Add the soup with chopped garlic and let it brew for a few minutes. Pour into plates, sprinkle with parmesan and greens.
