If the egg has surfaced in the water, can it be eaten?

People who at least sometimes come to the kitchen not only to eat, but also to cook something, over time notice useful trifles. For example, that eggs do not swim while cooking, but lie on the bottom. Therefore, the vague suspicions that arise when a raw egg floats up in the water are not unfounded.

What is there inside?

The difficulty of determining the freshness of such a commodity when buying is obvious. Especially in supermarkets, where eggs are often sold in a closed, opaque package. But everything becomes clear when we bring them home and start cooking. If it is necessary to break them, the following signs should be alerted:

  1. The smell of hydrogen sulfide.
  2. Opaque protein.
  3. When breaking into a frying pan or into a bowl, the yolk immediately spreads out.

But how to check the freshness of an egg without breaking it? Simply immerse in water. If the egg pops up in the water, it is spoiled or stale.

Why does the spoiled egg come up?

Contrary to common misconceptions, the egg is not airtight. There are pores in the shell so that the chick can breathe. But besides oxygen, microorganisms also penetrate through them. As a result of the vital activity of some of them, putrefactive processes develop and gases are released. If the egg floated in the water, it means that a lot of gases accumulated in it, which are lighter than water.

By the way, even if there are no harmful microorganisms inside that cause decay and an unpleasant smell, the old egg will still float up. Between the proteinaceous and shell-like shells on the blunt side, air gradually accumulates. For the same reason, the stale egg is very light.

By the way, that's why it is recommended to store eggs with a blunt end up, so that the yolk does not come into contact with the air chamber. And it's better not to put them in the compartment in the refrigerator door, as its frequent opening leads to the fact that they quickly deteriorate.

If the egg does not float up completely

When immersed in water, the egg immediately goes to the bottom and takes a horizontal position, then we have a very fresh product. But over time, internal chemical processes change the consistency of protein and yolk, making them more liquid. Therefore, if the egg surfaced in the water with a blunt end upwards, then it should be about a week. So, you can still eat it. If it takes a vertical position, then it is about 2-3 weeks. The egg, which is more than a month, emerges completely, and it can not be eaten.

Deceptive salt

Knowledgeable people add a little salt when cooking eggs, so that accidentally broken eggs do not leak out. Therefore, it should be noted that if you first added salt to the water, the correct definition of freshness will be in question. The fact is that salt increases the density of water. If the egg has surfaced in water that has been previously salted, this does not necessarily mean that it is stale. But if it lies horizontally even in salt water, then a fresh product can not be.

How to determine the quality of eggs in the store

In order not to happen that all three dozen purchased eggs suddenly surfaced, it is necessary to try to determine their freshness even when buying.

  1. View the expiration date. It must be borne in mind that the package should indicate the product class. There are dietary eggs that store no more than 8 days, and there are canteens (blue print), which we most often buy. Their maximum shelf life is a month. There is another class of long-sheltered. They can be kept in the refrigerator for about six months, but these are rarely found in stores.
  2. Inspect the surface. The shell must be matte and slightly rough. Smooth and shiny, it happens only in stale eggs.
  3. Weigh the egg on the hand. If it is old, it will be very light in weight.
  4. Shake the egg. When it is fresh, the yolk does not move inside. So, you will not feel that something is hanging in the shell, and you will not hear any sounds when you shake it.

Well, now we have figured out what's what, and we realized that if the egg has surfaced in the water completely, then it's stale, and even foul. However, a boiled egg can be surfaced, mistakenly placed next to the raw, but such confusion is rare. Therefore, it is better not to save on health and throw away a stale product.
