How to mold manties

In Siberia, mantas are called "poses", so the word "pose" means to mold mantas.

The following products and equipment are required for the preparation of mantis :

Mantova, plate, water, salt, flour, eggs, pepper and other condiments (on taste), onions, meat, fat, butter and a little vegetable, for example sunflower.

How to cook the dough :

The recipe for making dough for manti is the same as for dumplings, that is, you need to take flour, eggs and water and knead an elastic dough. Prepared dough should be covered with a large cup so that it does not weathered.

Preparation of stuffing :

To get juicy mantles, you need to take beef and pork in equal parts and be sure to add onions. For 1 kg of meat add 1 kg of onions, 3 - 4 medium-sized potatoes and spices to taste. Spices can be used the same as for pilaf - coriander, zira, ground pepper, salt. Then cut the meat as small as possible, approximately 5 mm in cubes. Meat is better to cut, but not twist in a meat grinder, this will also depend on the taste of the dish. The prepared minced meat is seasoned with spices and temporarily set aside.

Next, you need to put water in a special container - cascade. This is a kind of steamer, which is a pan with a lid and several removable "superstructures" in the form of small pots, but with holes on the bottom.

Now let's take a look at some of the ways how to mold a mantle:

All "superstructure" parts of the mantovarki must be greased with vegetable oil, so that there is no sticking during cooking.

The dough must be rinsed once more, then cut off a small piece of the total mass and mold out the "sausage" from which the juices will be rolled-thin slices 10 cm in diameter.

How to mold manti - the process itself:

- in a round of dough we put forcemeat, to give the mantle the juiciness it is possible, having put on a small piece of a slice of butter. Further we turn off and we splash the juice.

- with fingers very carefully we take from two edges of circles, so that forcemeat was in the middle, we cover the middle, then in turn edges, gluing them from the side.

- Put the mantles in the mantovarku immediately, in the process of molding, so that they do not come into contact with each other.

By this time, the water in the saucepan boiled, you can lower the "superstructure" with the mantles in the mantovarku and close the lid. After 40 minutes, the manta rays should be ready.

You can serve with a sauce of this preparation:

In kefir is added bitter pepper, garlic and salt, mixed in a bowl. You can sprinkle the removed manties with chopped greens. Bon Appetit!

What do you need:

How to cook:
From flour, water, salt, knead elastic dough, as in the main recipe. Cover the dough with a damp towel or napkin and leave.

Pork meat to pass through a meat grinder. If the pork is not too fat, add a finely chopped bacon into it. Minced meat mixed with finely chopped onions, salt, pepper, finely chopped garlic. In the received forcemeat it is possible to add finely chopped greens.

From the dough, form cakes (each weighing about 20 g) of medium size. Roll them separately so that the edges are thinner than the middle. In the middle of each circle lay out the prepared stuffing and tear the edges. Put the mantles on a steamer sheet and cook for a couple of minutes until ready. Manties lay on a large dish, smeared with butter, and serve to the table. Separately serve sour cream or soy sauce.
