How to make tomatoes in your own juice: two options

There are several ways of harvesting tomatoes for the winter. Each of them is good in its own way. Some like salted tomatoes, so that the taste would be like a barrel vegetable. Many like sweet tomatoes, which are great as a snack for any table. But in this article, let's talk about how to make tomatoes in your own juice. Later they can replace tomato paste, suitable for borsch or pizza.

There are two ways how to make tomatoes in your own juice. In the first case, peel, and in the second harvest tomatoes whole. If you do not remove the skin, the vegetables are stronger and better preserved in the brine. But it is more convenient to use tomatoes without skins. So, how to make tomatoes in your own juice? Take 200 grams of sugar, three liters of tomato juice, 50 grams of salt, tomatoes, a few grains of sweet-scented pinks and cloves, a small spoonful of vinegar (70%) and three cloves of chopped garlic. Tomatoes are washed and sorted. Whole and dense we leave for preservation, and from soft and rumpled we make tomato juice. Selected tomatoes are punctured at the base of the stem with a toothpick in several places. Prepare in advance cans for salting. We put tomatoes in them. Prepared tomato juice poured into a container and put on a plate. When the pot is boiling, add salt, sugar, pepper and cloves to it. We cook tomato juice for about 30 minutes. Lastly, put the chopped garlic. We pour tomatoes in jars and fill them with lids, but do not roll them. Sterilize the prepared preservation for about 20 minutes, and then tightly roll. Leave the tomatoes to cool, and then move them to a cold place.

Preservation is a delicate thing

You can prepare tomatoes in your own juice pieces. To do this, take strong fruits for conservation (2 kg) and ripe fruits for tomato (2 kg). You will also need two large spoons of sugar, two large spoons of salt, a few leaves of laurel and pepper to taste. Tomatoes washed and cut with rings of medium thickness. Then put them in prepared banks. Of soft fruits we make tomato juice. We twist them through a meat grinder or wipe it through a sieve, before letting it in a saucepan. You can also use a blender. Choose any method you like. In the prepared tomato juice, add sugar, large salt and all spices and wait until it boils. Then we fill them with cans of vegetables. Do not close the lids tightly, because we sterilize for 25 minutes. Then the cans are thoroughly closed, turned over and wrapped. Store the cut tomatoes in their own juice in a cold place. In winter, on the tables, they will be an excellent snack.

A few tips

And how to make tomatoes in own juice without a skin? They need to blanch. To do this, cut them crosswise, dip the vegetables into boiling water for 2-3 minutes and immediately move it to ice water. After such manipulation, the skins can easily be removed. Spices and spices can be added at your discretion. The main thing is that they do not seriously interrupt the natural taste of tomatoes.
