How to make a meringue? Whisk the protein mixture

Only chilled proteins from large and fresh chicken eggs are used to prepare meringues, since they keep the air well and give a thick mass of necessary density.

Separate the proteins from the yolks should be extremely careful over a separate cup. The resulting protein, without the slightest admixture of yolk, is sent to the whipping container. This capacity should be several times larger than the volume of the protein mixture.

All utensils and corners of the mixer should be perfectly clean and degreased.

To give the proteins a fortress, they should be slightly salted before whipping.

Start the whipping process at a slow speed of the mixer, gradually increasing it to maximum and adding sugar, at the rate of two tablespoons per protein. Beating this mass is required until the sugar dissolves completely, when the contents of the container reach a state of lush and very thick foam. A quality whipped protein mixture has a glossy shine. In addition, it perfectly holds the shape and does not spread. This can be checked by lifting the mixer over the protein mixture. If the sharp peaks on the tips of the mixer do not bend under their own weight, then the mixture is cooked correctly. You can also turn upside down the container with whipped whites, the contents should stay in place.

For a couple of minutes before the end of whipping, it is recommended to add a few drops of lemon juice to the mixture.

No matter how well the protein mass is whipped, it settles extremely quickly. Therefore, meringue should be baked immediately after the preparation of the mixture.

Further, using a confectionery syringe, you need to quickly put off small portions of protein mass, oiled or covered with baking paper, baking tray, leaving the distance between future cakes about 3 cm.

The resulting products, the size of a walnut, are ready for heat treatment. And meringue should not be baked, but dried.

How to make a meringue? Dry meringue in the oven

To dry the meringue in a conventional oven, it is necessary to comply with the temperature regime from 100 to 120 degrees. At higher temperatures, the cake can settle. The first 40-50 minutes of baking the oven door should be kept slightly ajar, placing a thin pencil under the door. And only then it can be tightly covered. Readiness meringues can be determined by how easily they fall behind the paper. When pressing the bottom of the finished product, it does not crumple. The baking process in the oven usually lasts 1-2 hours. Leaving the meringue in the oven until completely cooled down is completely permissible.

How to make a meringue in a microwave?

Bake meringue in a microwave oven in the usual mode is strictly not recommended. For this purpose, choose the convection mode and dry the products 30-40 minutes at a temperature of 110 degrees. On the rotating disc, future cakes should be laid out in paper cake molds or on special paper for a microwave oven. Under the influence of hot air, meringues become crispy and keep the shape.
