How to cook fried pies with jam

Various products made from roast dough are present in our diet for a very long time. Baking pies has always been considered a traditional occupation in Russia. If now cakes are prepared for the festive table, then in the last centuries nothing was known about them, as about many other dishes, and pies were already present. At present, it is difficult to determine when these products appeared in cooking, and even more so it is impossible to find any information about the cook who first cooked them, but the tradition of baking remained forever.

According to his consonance, we can assume that this dish is akin to Azerbaijani lavash. However, the latter is a flat cake made from a thin dough, which is baked on a heated surface. In the homeland of lavash you also know such an ancient dish as lavashana. It is a jam of sour berries (for example, cornel), dried in a tight cake.

To make Lavashan at home, you need to grind the berries, peeled, into a uniform mass. After that, it is boiled to the consistency of a thick jelly, after which it is applied to the boards with a thin layer and dried.

It is easy to guess that left-handed and lavashan are similar only by the presence of a berry component. However, compared to the thin pita bread from the dough, the bond is more noticeable between the two above-mentioned dishes. The fact that different nations could create similar dishes remains a mystery, but such a coincidence is undeniable.

How to cook fried pies with jam, or left-handed? This is not difficult at all, and even a beginner mistress can easily cope with this recipe.

What do you need for this?

You will need the following ingredients:

  • 400 grams of wheat flour;
  • 100 grams of water;
  • 50 ml of cognac;
  • 1 egg;
  • 1 table spoon sugar;
  • 1 pinch of salt.

For filling:

  • 300 grams of any jam;
  • 1 raw egg white.

For frying, you also need 0.5 liters of any vegetable oil.

Recipe for fried pies with jam

Take a large bowl and sift the flour into it so that it forms into a hill. Add salt and sugar and mix well. Then slowly pour the cognac into the middle of the dry mixture, pour the egg into it. Start mixing the dough, gradually pouring water.

The dough should be stirred until the moment it becomes tight and does not get a uniform structure. However, it must also be taken into account that it should be rolled well.

Once you knead the dough to the desired consistency, you need to cover it with a tissue napkin and leave it for about half an hour (and can be for a longer time). After that, roll it up to a thickness of no more than 2 mm.

Immediately whisk with the corolla egg white, grease them with the resulting cake from the dough. Using a cup or a glass, cut out smooth circles from the dough. In the center of each of them put a spoonful of jam, then wrap the dough with a boat or an envelope. The edges must be secured as tightly as possible to avoid leakage of the filling.

How to cook fried pies with jam in a frying pan?

Take a frying pan or a pan with a thick bottom, pour oil into it and heat to a boil. In turn, put pies in it. Do not add them too tightly, as they can be badly fried. As soon as the fried pies with jam are ruddy, with the help of noise remove them from the pan and lay them on paper napkins. This will help remove excess fat from them. After that, put them on a plate and sprinkle with a layer of powdered sugar.
