Chanterelles in sour cream

Chanterelles stewed in sour cream is a classic recipe for the preparation of these mushrooms. Such mushrooms have an unusual taste and will always be able to decorate your table, whether it's festive or most everyday.

To prepare you need:

  • Chanterelle - 0,5 kg;
  • Onion - 100 g;
  • Sour cream - 200 g;
  • Parsley greens;
  • Several peas of black pepper;
  • Sunflower oil for roasting.

Before the preparation of chanterelles in sour cream, they need to be thoroughly washed and cut into the pieces you need, which can be either bruski or lobules. If desired, they can not be cut, but if you cook large mushrooms, then this procedure is simply inevitable. When you cut the chanterelles, put them in a deep frying pan and, filling the bay with salted water to a third of the volume that they occupy, start cooking under the closed lid. After boiling, wait about 10 minutes and remove the lid. Do not reduce the fire, continue the process until the water boils completely.

In the meantime, prepare the onion for roasting. To do this, it must be cut into small straws and put on a pre-cooked frying pan with hot oil. Fry it until you see a slightly golden crust.

While the water evaporates from the frying pan with mushrooms , pour in the sunflower oil and add the fried onions, continue frying the resulting mass for another five to seven minutes. Do not forget to regularly interfere with chanterelles, since they have a property to burn.

At the end of the allotted time, reduce the fire of the plate to the very minimum and fill the mushrooms with sour cream. After that, put the pepper in the pan and cover it with a lid, cook until ready - for seven minutes on low heat.

Before serving, sprinkle chanterelles with herbs and you can put them on the table.

Before boiling chanterelles, like all other mushrooms, they need to be thoroughly washed under running water, because they tend to accumulate debris in the folds of hats. After that, mushrooms need to be cut into pieces and put into a pan. In addition, pour them with water just enough to cover the mushrooms well. In this form, the fungi should be cooked for a relatively short time - for half an hour. In the process of cooking over the broth there is a film and a foam - it must be periodically removed.

If you do not want to - you can not salt water, in which you cook mushrooms, since it is not necessary. So you can do in the event that later boiled chanterelles you will use to prepare other dishes.
