In Russia, everyone knows perfectly well that rice can be cooked with soup, pilaf, rice can be added to a salad, or served as an independent dish.      It is not a secret for every person that different varieties of rice are suitable for preparing different dishes. To date, on the shelves in the store is a huge assortment of different varieties of rice. They all differ in taste and color, the way of processing, the cooking time and the useful properties. When selecting, it is necessary to draw the removal for the length of the rice grain and its shape. It will depend on this whether the rice will be friable.

Long grain rice is the most popular rice variety. Its granules are half a centimeter and larger, thin enough. The peculiarity of this variety is that the rice is not boiled and does not stick together. Most often it is used as a side dish to fish and meat.

Medium grained rice - its oval shape, up to 5 mm in length. Ideal for cooking risotto, paella, and as good as a soup ingredient. When using it, the dishes are viscous, since this variety contains more starch.

As we have already understood, a suitable rice is long grain. To prepare friable rice water (broth) should be twice as much rice. Cook rice in a pan is not very convenient, which is why you should use a frying pan with a lid. At the bottom of the frying pan pour the vegetable oil, a small amount, to make the rice more pleasant flavor and taste, you can fry the finely chopped onions, but this, of course, if desired. Pour the rice into the frying pan and mix thoroughly so that each rice is covered with oil. It is thanks to the oil that the finished rice will be crumbly.

Next you need to add water to rice. A wonderful alternative to plain water is the broth, especially if the rice is served with beef (use beef broth better), with chicken (broth chicken), with fish (broth fish). If possible, bouillon cubes should be avoided, as they are very fragrant and can break the tender taste of rice. Also at this stage, you should add salt, approximately every 150 ml - 1 teaspoon.

After adding the liquid, you can mix it only once. With frequent stirring, the tender rice breaks down and starch begins to be released from it, and as a result we get a sticky rice. Cover the lid and reduce the fire to the very minimum. The main thing is not to digest rice. White rice is prepared no more than 15 minutes, brown about 40 minutes. When preparing rice, it is desirable to open the lid as often as possible and release steam. After the liquid on the inclined lid stops accumulating, the rice can be considered ready.

When the rice is ready, remove the lid and put a dry kitchen towel on top, for about 10 minutes. It will absorb the remaining moisture well, and the rice will become crumbly and dry. Before serving, rice should be loosened with a fork, or with chopsticks.

Another way of making crumbly rice is to cook rice in a microwave oven, it's very convenient.

In a nonmetallic container with a pile of rice, fill the liquid in a 1: 2 ratio. Add spice to taste and cover it with a lid, put it in the oven. We cook at 100% power for 5 minutes and at 50% for another 15 minutes. After the required time, we remove the container from the oven and serve it to the table.
