How to cook a cupcake "Stolichny"?

Everyone knows what a cupcake is. Among the variety of this product is the cupcake "Metropolitan" - a rather dense, sweetish and slightly moist cake with raisins and other fruits, sprinkled with powdered sugar or soaked in lemon juice. Let's consider some recipes for making this cake.

For cooking, we need:

  • Sugar and flour, about one glass;
  • Three large eggs;
  • Raisins, butter, a spoon of cognac, baking powder, salt and powdered sugar.

Cupcake "Stolichny", recipe:
First of all, whisk eggs with melted butter and sugars. Then add cognac, flour, baking powder and raisins to the mixture. Mix thoroughly until a homogeneous mass is obtained. Pour the resulting dough into a baking dish.
Bake about an hour and a half at 190 degrees. Over the cupcake, sprinkle the powdered sugar and let it cool down completely.

To prepare this cake we will need:

  • Flour, about a half cup;
  • Sugar - ¾ cup;
  • Four large eggs;
  • Butter - one packet;
  • Two small lemons;
  • Vanilla, salt and baking powder.

Delicious cupcake, recipe:
To start, we prepare lemons: we wash them, we press them a little, rolling on the table, so that they give their juice as much as possible. Then we take a grater and with its help we remove a peel of lemons which then is useful for the test. Next, squeeze out the juice, which will go to the dough and for lemon impregnation.
Sift into a bowl of flour, add a baking powder and a little salt. Then we dunk the butter and give it a little bit of a shit.
In a separate bowl, beat the eggs, then add sugar and beat again. After that, gently pour a thin trickle half a lemon juice, add the zest and pre-melted butter, mix everything. Then add vanilla and mix again.
Next, gently mix in several stages of flour with egg mixture. Then turn on the oven and heat it to 180 degrees.

The form for baking is covered with oiled paper for baking and sprinkle the bottom with semolina. We spread the dough and put it in the oven, about 20 minutes, then reduce the gas to 165 degrees and bake another 25 minutes.
The dough should grow about twice, the texture should be porous, pleasant lemon color. The metropolitan cake is ready, when the toothpick to which readiness is checked will be dry.

After the metropolitan cupcake is ready, you need to cool it for fifteen minutes. While it cools down, we will prepare the syrup for it. To do this, mix the remnants of lemon juice and fifty grams of sugar, then put everything on a slow fire and constantly stir until all the sugar is completely dissolved. Then, the cupcake is punctured with a toothpick in several places and watered with a syrup - this is the last step in the preparation of the cake. After about ten minutes, the cake can be cut into thin openwork slices. Despite the fact that the description is quite long, the time for preparing the cake took us only an hour and a half.
