Fat in chocolate

Salo is considered a national Ukrainian product. Since ancient times Ukrainians have been growing pigs to get fatty meat and fat. And what kind of dishes are not invented from this product! And even desserts! Fat in chocolate refers to this category.

More recently, bacon in chocolate was considered a joke. This joke was composed of anecdotes and funny stories. This name even became a household name and meant something that was not at all tasty and not combining. However, this is a real dessert and delicious delicacy. Although the recipe for "Salo in chocolate" is quite simple and affordable even for a beginner hostess. The only problem that can arise is the unwillingness of domestic gourmets to try this delicacy. It is from these considerations that it is better to treat the household members, but to invite them to guess the ingredients. Most likely, not everyone will guess what it is.

Fat in chocolate is prepared using raw or slightly salted fat. Chocolate, too, not everyone will do. Only black chocolate without any additives will perfectly match with lard. It is better if it contains at least 75% cocoa. Add spices to the glaze.

Recipe for "Fat in chocolate"

For this recipe, you need fat (from the abdominal part of the carcass). You can use a piece with a little smoked meat. If the fat is slightly salty, then it must be rinsed from the salt residues. A slice is cut into thin plates, about 0.5 cm wide. Naturally, it should be completely thawed if it was in the freezer.

Next, take a tile of black pure chocolate and melt in a water bath (you can also do it in the microwave oven). If you are drowning chocolate on water, then it must be constantly stirred. Until the glaze has thickened again, quickly proceed to the next stage. Filet of dill in a mixture of ground spices: black and sweet pepper, cardamom. Remember, there should be very few spices to avoid spoiling the product. To do this, cardamom is taken at the tip of the knife, and the peppers all in a pinch. This mixture should be enough for all the fat.

Slightly smeared with bacon spices, dip the plates into chocolate icing so that it remains on all sides. After that, an unusual delicacy is laid out on foil or dense polyethylene and kept for about 8 hours in the freezer (you can leave it overnight).

Fat in chocolate (sweets)

Salo (100 g) is cut into pieces and grinded in a meat grinder, blender or processor to paste-like mass. Then it is laid out on a flat sheet, for example, a baking sheet, with a thin layer, approximately 0.7-1 cm thick. In this form, the fat is sent to the refrigerator, so that it is slightly thickened and it can be cut into portions.

Chocolate tiles are heated in a water bath (this is preferable, since it is easier to control the process). In order for the chocolate to melt faster, it can be broken into pieces. The smaller they are, the faster and more uniformly the glaze will warm up. Although she is preparing so quickly. In a warm glaze you need to add butter (60 g) and ground spices: ginger, nutmeg, sweet pepper and chili, cardamom. Each kind of fragrant additives should be presented in a small amount - not more than half a teaspoon. Cardamom, chili and nutmeg are generally needed at the tip of the knife. Glaze with spices must be mixed.

Next, in the forms in which the candies will be placed, pour glaze, approximately to the middle of the height. For this purpose, you can use ice forms or special for sweets. Salo get out of the refrigerator and cut into small squares or rectangles. Of course, their size depends on the size of the forms. Pieces of bacon are placed in molds and topped with chocolate completely. After that, the candy should be placed in the refrigerator. They can be in 1.5 hours. But if they stay there longer, nothing bad will happen. Here is an interesting fat in chocolate. Candy, by the way, turns out to be gentle and spicy, and the guests certainly do not immediately determine what it is.
