Dishes from chicken liver

All meat by-products are rich in vitamins, minerals and proteins. The only drawback is that they can contain toxins if the animal has been grown on poor-quality feeds. However, these products are safe if used in moderation. Dishes from chicken liver are useful, since it is food with a low content of sodium compounds. It is also a good source of thiamine, zinc, copper, manganese, protein, vitamin A, riboflavin, vitamin C, niacin, vitamin B6, folic acid, vitamin B12, pantothenic acid, iron, phosphorus and selenium. But dishes from chicken liver have a certain negative: they are characterized by a high content of cholesterol.

Recipe 1

For 8 portions of a Jewish cold dish from chicken liver, ingredients will be required:

- 0.5 kg of chicken liver;

- 3 large onions, diced;

- ¼ cup of butter;

- 4 eggs, hard boiled and peeled;

- salt;

- pepper.

The liver is cooked or fried until ready. Onions until browning are fried in oil, but not to burn, it is constantly stirred. Grind the liver in the combine. Add the eggs and grind everything. Report the onions and butter remaining in the frying pan, sprinkle with salt, pepper, mix everything in the combine to the desired consistency (for an amateur: coarse or thin, like a pate). Spread in a bowl, refrigerate for at least 2 hours. Serve with crackers or Jewish traditional festive bread (called hala), which is made from a yeast dough.

For a risotto and a dish of chicken liver (4 servings), the following set of products is needed:

For risotto we take:

- 1 ½ cup of rice arborio (round, not long rice with a high content of starch). Before cooking it is not washed, so as not to wash out the starch and get a velvety texture of the dish;

- 4 tablespoons buttery cream;

- 1 onion, sliced in thin semicircles;

- 5 glasses of broth chicken;

- salt;

- pepper;

- ¾ cup of fresh grated cheese "Parmesan";

- chopped parsley leaves;

For the liver you will need:

- 0.5 kg of chicken liver;

- 2 table spoons of flour;

- 1 glass of strong dessert wine Marsala (native to Sicily);

- 3 tablespoons of olive oil;

- 2 tablespoons chicken broth.

Prepare the risotto. In the saucepan 3 spoons of table oil are heated. Add the onions and fry for 5 minutes (until soft and transparent). Pour the rice and, on medium heat, 2 minutes impregnate with oil. In order not to burn, continuously mixed with a wooden spoon. Pour half of the hot broth. Constantly interfere with a wooden spoon until the rice almost completely absorbs all the liquid. Continue to add the broth in portions until the croup is tender, for 20 minutes. Season with salt and pepper. Remove from the heat and immediately add the remaining spoon of table oil and Parmesan. Stir and leave in the warmth.

Chicken liver is properly rolled up in flour, extra shake. In a saucepan, oil is heated over medium heat. Lay the liver and fry for 5 minutes until golden brown. Pour the wine and simmer for another 5 minutes. Season with pepper and salt. Pour in the chicken broth. Keep on medium heat until the minute is ready. 3. Broth should be boiled slowly, but that the sauce slightly thickens. Give the chicken liver immediately, laying in the center of the dish, and around it hot risotto. Decorate with parsley.

Recipe 3

Very delicious turns chicken liver salad with mushrooms. 6 servings will require products:

For refueling:

- 1 thin glass of yogurt;

- juice of one lemon;

- 30 ml of olive oil;

- 1 tablespoon of tea salt;

- 1 tablespoon cayenne pepper ;

- 1 clove of garlic (crushed);

For salad:

- 0.4 kg of chicken liver;

- 60 g of flour;

- 1 thin glass of champignons (button), cut in half;

- 1 tablespoon of creamy cream cheese;

- ½ cucumber cut into cubes;

- 1 beets are boiled and finely chopped;

- 1 green pepper cut into cubes;

- lettuce leaves are washed and dried.

Mix all ingredients for refilling and leave in the refrigerator. Heat the oil, pour the liver in flour and fry it on either side of minute 2 or until browning. They put them aside. In the same frying pan fry the mushrooms until a crust is formed and season them with cream cheese. They put him aside. Lay the leaves of the lettuce, on them - the liver and mushrooms, previously mixed in a bowl with the rest of the ingredients. Salad with chicken liver and mushrooms is ready. Immediately before serving, add salad dressing.
