For the cream "Charlotte": two hundred and ten grams of butter, one hundred and eighty grams of sugar, one yolk, one hundred and twenty grams of milk, as well as a packet of vanilla sugar, one spoon of cognac, one spoon of cocoa.

Preparation of biscuit

"Truffle" cake, the recipe of which we are considering, begins with the preparation of the cake. To do this, first the proteins are separated from the yolks. One hundred grams of sugar is beaten with yolks into a steep mass. Whites are beaten with the rest of the sugar until white foam forms. Two mixtures are gently mixed, add flour with starch and mix very lightly from the edges to the center. For glaze: one spoon of cocoa, one spoon of sour cream, one spoonful of sugar, one spoon of butter.

Then the cake is left for eight hours to stand.

Preparation of syrup and crumbs

For syrup I take water, fill it with sugar, boil and cool it. The crumb is cooked as follows: the sweet is melted, mixed with a small piece of butter, not strongly heating. Then add cocoa and quickly mix everything. The hardened mass is rubbed on the grater.

Cream Preparation

No cake "Truffle" can not do without cream. To make it, you need to mix thirty grams of protein and milk, and then strain it. In this mixture, pour sugar and bring it to a boil, then boil for five minutes. During this time the cream should thicken. It is poured into a bowl and chilled, stirring occasionally. Beat oil with vanilla in a lush mass, add cooled syrup in small portions, constantly whipping. When half the syrup is left, cocoa is added to the mixture and whipped again. In the end, pour in cognac. Ready cream should keep the shape well.

Forming a cake

Biscuit cut into two or three cakes, each of which is watered with syrup. On the lower cake impose a cream, cover the top and cover the entire cake with the same cream.
