Here is the simplest recipe:

You will need:

  • flour;
  • 2 eggs;
  • glass of water;
  • 50 g butter or lean oil;
  • A teaspoon of soda;
  • vinegar.

It is necessary to sift the flour, as this procedure will not only allow to separate lumps and extraneous impregnations, but also saturate it with oxygen. This will only benefit baking. The exact amount of flour that you need, it is difficult to predict, because it all depends on its quality. Take about a kilogram, and add it gradually.

Now you can start and bake. Throw a pan of salt in a frying pan. If it cracks, then the temperature is high enough. We take a frying pan in one hand. And another pour into it about half the ladle dough. Shake the pan from side to side so that the dough is evenly distributed along its bottom. We put on the fire. We wait. As soon as the surface of the pancake was covered with a little dried pimples, gently pick it up with a spatula and turn it over. We determine the readiness of the second side by lifting the edge of the pancake with the spatula. If it is golden in color, then you can shoot it. You have turned out beautiful and delicious pancakes. The recipe, as you see, is really very uncomplicated.

Pancakes on sour milk are baked about the same way, only you will not need vinegar. Soda will be extinguished with lactic acid. But you will not have to give up water either, you'll need it here, only it will be boiling, and you will also need three tablespoons of sugar.

Sugar is ground with eggs to a homogeneous mass, and then pour into it half a cup of boiling water. The mass should whiten. Pour a liter of sour milk and enter gradually flour. Stir constantly stirring, making sure that it does not have lumps. Similarly, warm up the frying pan and add oil to the dough. This trick will allow you not to lubricate the frying pan all the time, but to do only the first portion.
