White wine is a gourmet drink

In the CIS countries, red wines are more popular, while in Europe, preference is given to whites. This situation has developed due to the fact that even in the Soviet Union, more dark grape varieties were grown both on an industrial scale and in personal household plots. We have an erroneous opinion that white wine is less useful than red wine.

The process of winemaking, the main phase of which is considered alcoholic fermentation, is the natural conversion of fructose and glucose into alcohol. In addition to alcohol during fermentation, secondary substances are formed that affect the quality of the wine: tannins, aromatic compounds, organic acids. The completed fermentation process is considered only when the sugar in the grape must is completely discarded.

White wine differs from red in that it is made not only from white, but also from some dark varieties, and red is prepared only from dark grapes. The color of the wine depends on the color of the skin of the berries, which contains the coloring substances, so when producing white wine from dark-colored varieties of grapes, try to avoid prolonged contact of the juice with the skin of berries. Dark varieties are also used for obtaining rose wines. Such drinks are sometimes produced by blending, during which white and red wine materials are mixed in certain proportions.

Good white wine is also made at home. The main thing in this production is the use of a well-ripened grapes, which reached a high sugar content. If the berries have a low sugar content, you can resort to adding a certain amount of sugar to the grape must. This technique is called shtapalization.

White wine should be stored under certain conditions. It is established that sunlight affects not only the quality of the drink, but also for the period of its storage. Wine contains tartaric acid and compounds that under the influence of sunlight are exposed to negative chemical processes. So in the drink there is a process called photochemistry of iron tartrate, which negatively affects the quality of the drink. During this process, the natural wine preservatives dissolve, which leads to a darkening of the wine.

To preserve the useful properties of the drink, white wine is usually poured into bottles of dark bottle glass (amber and dark green), absorbing the light of active waves of ultraviolet rays.

Table white wine is considered one of the most delicate and delicate. To produce such a drink, grapes are used without excessive sugar, since with a large amount of sugar, heavier, alcoholic wines with a low acidity are obtained. The most harmonious are wines with an alcohol content of 9-11%. Such drinks should not have sourish tones, often appear in table wines and reduce their quality.

White wine is obtained from all varieties of white, pink and most red grapes. You can not get such a drink only from the varieties of "black" grapes with intensely colored flesh. The color of this drink depends on the type and production technology. It can vary from light-straw with a greenish or yellowish hue to lemon yellow, gold or dark amber.

The color of the wine indicates some of its properties. Thus, slightly varnished varieties do not pass aging in wooden (oak) barrels. White wine with intense coloration with a lemon tint indicates a short infusion time on the mash or the production of a drink from over-ripe grapes. The golden or amber color indicates a serious age or a long aging time in an oak barrel. White wines are less extractive than red wines. They are distinguished by a light and delicate taste.

White wine, the benefit of which is much more than harm from the effects of alcohol, positively affects the functioning of the cardiovascular system due to the content in it of substances such as polyphenols. In addition, the daily intake of 200 ml of dry wine leads to a gradual decrease in weight. This drink strengthens the immune system, improves lung function, increases the level of antioxidants.

To get true enjoyment of a bouquet of wine, you should follow the rules of its use and correctly combine the drink with snacks and hot dishes. Many people do not know what they drink white wine with. Table (dry and dry) is excellent for aperitif, fish dishes, poultry dishes (chicken, turkey, game), stewed vegetables, seafood (crabs, shrimps, oysters, mussels). Semi-sweet wine is combined with various vegetable dishes and seafood. Sweet wine - with desserts, chocolate, fruits, crackers, cheese.
