No matter what people say, who are accustomed to fast-food, just do not compare products from the market with dishes of home cooking in no way! Many mistresses, and often owners, think and do differently: they are accustomed, though not every day, at least on holidays, to pamper their household members with culinary delights.

One of the popular dishes - baked pork in the oven, which is prepared, both for the holidays, and for every day. And the primary task in this case is the purchase of suitable meat, and it must be bought by all means a whole piece, not to have veins, moreover it would be nice with a small layer of fat. Also it is necessary to take into account the location of the fibers: for convenience of fastening and subsequent cutting, they should be longitudinal. And, of course, in the first place, meat from young pork should be chosen absolutely fresh, tender pink: no frost-defrosting in any case!

Recipe for "Roasted Bread in the oven"

Ingredients:

  • A piece of pork weighing 2.5 - 3 kg, preferably the back or neck portion;
  • Onion - 300 g;
  • Garlic - 2-3 heads;
  • Carrots - 300 g;
  • Mustard - 50-70 g;
  • Mayonnaise - 100 g;
  • Pepper - 6-8 g;
  • Salt - 100-120 g;
  • Bay leaves (crushed);
  • lemon juice.

"Cold boiled in the oven." Preparation

  1. Grate garlic, onions, add lemon juice, chopped bay leaf, black ground pepper and salt.
  2. A piece of prepared meat is soaked with a paper towel, make a deep enough puncture with a sharp knife, put in the "pockets" pieces of carrots and garlic (cut into long slabs with pointed edges) and rub the resulting mixture.
  3. Leave the meat for 12-24 hours in a cool place or refrigerator, so that it is muted.
  4. Before you send the meat into the oven, it is greased with mustard and mayonnaise.
  5. Bake in the oven at a temperature of 160º to 180ºC for two to three hours. At the same time, during the baking, the meat should be turned every half hour and poured with juice.
  6. Half an hour before the preparation, carefully scrape the onion, garlic and other ingredients from the surface of the meat piece, without affecting the fat, and continue baking until the boiled-in-the-oven reddens, approximately 30 minutes.
  7. This truly divine dish is served, both cold and hot. Only in case it is eaten hot, there is a chance not to try it in the cooled down, because there is simply nothing left. Correctly stuffed meat, in addition to a delicious aroma, looks attractive on the cut.

Experienced cooks recommend before placing the meat in a goose fry or a special brazier, putting birch or alder branches under the piece, except that the juice will drain, the meat will not burn, and a unique smell is obtained which can not be achieved in any other way. Some instead of twigs use cabbage leaves, which are then thrown away or resort to other tricks.

The boiled pork in the foil in the oven is made even easier, the meat is also rubbed, marinated, but also carefully wrapped in several layers of foil in such a way that the droplets of the juice do not leak out, and since it does not leak, it is not necessary to water the meat and turn over too.
