Salting freckles. A few simple recipes

One of the options for treating mushrooms is salting. This is the simplest way, it does not require much effort. However, there are also secrets and rules. First of all, you need to know what kind of mushrooms you are going to cook. Each species has its own nuances that need to be considered. Let's talk about what is salting freckles and how it goes.

When preparing mushrooms, you should pay special attention to their quality. Worms, rotten and old specimens are better to throw out immediately. This rule applies to any method of procurement. Collected or purchased mushrooms sort and slightly cut off the legs. They also need to be cleaned of debris, leaves and sand, rinsing with running water. It is desirable that the mushrooms are about the same size.

Salting wavelets is carried out after their pre-soaking. These mushrooms are placed in water for a day, but no more, otherwise they will be unsuitable for further use.

If you add a little salt to the water, then the bitterness that these mushrooms have is gone.

In this way, salting mushrooms of pigs, mushrooms, russules, redheads and some others occurs. For a day, you need to change the water twice.

If there is no time for a long soaking, then you can simply fill the mushrooms with boiling water for one hour. Then it is necessary to cool them in cold water.

Salting freckles in a cold way does not require much effort. In the prepared container (better, if it is a barrel), the mushrooms are laid in layers. Each layer should be poured with salt. For one kilogram of freckles you need to take 50 grams of salt cooked. Also, layers are laid leaves of cherries, currants, sprigs of dill, cumin, horseradish and garlic, sliced into pieces. The waves should be laid down with their hats down. Each layer should not exceed 6 centimeters.

From above it is necessary to put a clean cloth and oppression. Mushrooms are stored for 1-2 days at room temperature, and then taken out into the cold. As far as salting, the waves will decrease in volume. Then you can lay out new layers in the barrel. After the barrel is complete, brine should appear within 5-6 days. If this does not happen, then put a yoke of a larger size. Salting wavelets lasts about 1-1.5 months.

This type of mushroom can be salted and hot. To do this, prepare the mushrooms in the same way as in the previous recipe. Then put a pot of water on the fire (0.5 liters of liquid per one kilogram of mushrooms). Also add salt. When water boils, mushrooms are placed in it. When the liquid boils again, it should be put in spices, bay leaves and any condiments. Foam, which can appear during cooking, must be removed. The waves are cooked for 15 minutes from the moment of boiling.

If mushrooms settle on the bottom, then they are ready. The brine becomes transparent at the same time. Then the mushrooms are pulled out of the pot and put into a container, intended for salting. After that, they are poured with brine (two tablespoons per liter of liquid). It should not be too much. Fold mushrooms in cans and cover with lids. After 1.5 months they can be eaten.

Pickling mushroom wavelets can be produced by any of these two methods. Store the prepared mushrooms in a cool and not very humid room.
