Recipe for eclairs with custard, rolls and tubes

The French word "eclair" means "lightning." Why? For the speed of production and a small number of ingredients. This ingenious recipe we owe the Frenchman Marie Antoine Karem. This French cook of the 18th century adored sweets, but at the same time tried to facilitate the process of their manufacture and use as few components as possible. But the first recipe for eclairs with custard appeared in cookbooks only at the end of the 19th century, after the death of its creator.

Today, eclairs are no less popular than the life of the cook Karema. You do not need to run after them to the nearest cooking, although there you can find a huge amount of delicious treats from any manufacturers. Try to cook them yourself. Pour water into the pan, add a little salt, boil the water. Next, you need to add a little oil, again bring the water to a boil. Then slowly pour the flour into the water (1 glass). Here, as when cooking semolina porridge, do not forget to stir constantly, otherwise the very unpleasant lumps that we know from childhood are formed. Stir the mass until thickened and remove from heat. Add 1 egg to it, stir. Fill the confectionary horn with the resulting mass. Further we squeeze out onto a baking tray, oiled, our dough, giving to the cake those shapes that we want to get in the end. Leave space between the cakes so that they do not stick together during baking.

For cream, take the pan, pour milk into it and put it on the fire. Stirring the milk so that it does not burn, ripen sugar into it (about 4 glasses). After boiling, remove from heat. After a while, we add to the milk a couple of glasses of flour or starch, as well as melted butter. In the cooled cream, add cream and vanilla powder. When the eclairs cool down, fill them with cream using a pastry syringe. At will: melt the chocolate and pour your cake.

Just like all ingenious! You can even add ingredients to your eyes. The recipe for eclairs with custard does not take you too long.

Another popular recipe is biscuits with custard. Buns, in contrast to eclairs, heavier baked goods for the stomach, because they contain yeast. You will need yeast dough: a pound of flour, a 50 gram packet of yeast, 100-120 g of sugar, a little salt. It is recommended to add a little less than a two-hundred-gram package of butter, grams of 170. When the dough rises, you can make buns. In the middle of each bun, a cavity is made for the cream. Further with buns, everything is the same as with eclairs. Just bake them a little longer. When the buns cool down, fill the grooves with cream.

No less interesting baking "Tubes with custard". Recipe is not only simple, but also gives the opportunity to show imagination: the tubes can be decorated with chocolate, honey, nuts, dried apricots, and raisins. Perhaps you'll come up with something else and invent a new recipe.

Dough for tubules can also be very unusual. For example, take coconut chips in the right amount (coconut chips should be more than flour), 3/4 cups of flour, half a cup of sugar, three eggs and a little butter. From the test, rectangular burrs are made. Bake them up to 5 minutes on a greased baking sheet. Then, not letting the cakes cool down, put the cream inside and roll the tubes. Coconut dough has amazing taste, and in combination with custard - just delicious!
