Potato pancakes

Potatoes are a universal product, from which you can cook the maximum number of dishes. And by taste, they will be very different from each other. That's why you can cook potatoes at least daily, and at the same time it will not get bored at all. From this tuber prepare a variety of fillings, side dishes, drinks, hot appetizers with meat and fish, light, but hearty salads, desserts and even bake bread. The kitchens of almost all the peoples of the world know more than one recipe for potatoes. This product is most popular among the Slavs and especially the Belarusians, where it is proudly called "second bread".

An important advantage of potato dishes is the simplicity of cooking, the availability of ingredients, which allows you to experiment in your own kitchen, achieving results that please the household.

One of the most delicious, simple and very favorite dishes for children is potato pancakes. They turn out to be incredibly light, pleasant to the taste and hearty. Do not confuse potato pancakes with pancakes, zrazas and other products from a rubbed tuber.

To make this simple, but very tasty dish, you need ingredients such as:

1. Fresh potatoes - ten pieces.
2. Yeast baked - thirty grams.
3. Milk cow three-percent fat content - half a liter.
4. Egg of chicken - one piece.
5. Salt - ¼ teaspoon.

Potatoes should be boiled, pre-cleaned of the peel. You can cook in a uniform if you plan to use meat or fish fillings. While cooking vegetables, you need to cook the spit. To do this, dissolve the yeast in a glass of slightly warmed, but not hot milk and, carefully adding flour, mix thoroughly, then leave to approach in a warm place. It is ideal to leave the saucepan with the cauldron near the stove, where at this time the potatoes will be boiled. When the latter becomes soft, it is necessary to drain the water. The next step is to knead the dough. Cooked and slightly cooled potatoes must be passed through a meat grinder, add to the resulting mass of spit and beaten egg, salt and leave the future potato pancakes a little more.

Fry them better on hot sunflower oil until a ruddy brown. For this process, the best is a pancake or cast-iron frying pan of a small (about ten to fifteen centimeters) diameter.

Potato pancakes are best served hot with sour cream, grated cheese or any sauce.

To make this dish more nutritious it is possible, using any toppings: minced meat, fish, stewed cabbage, boiled rice, jam, cottage cheese and much more to taste. The biggest satiety is potato pancakes with meat.

The dough for this dish is prepared as described above. When the pancakes are overcooked, they should be left for a short while to cool and prepare the filling.
This will require:

1. Cut into small cubes (not larger than one centimeter), meat fillets - five hundred grams.
2. Spices to taste (salt, pepper, garlic, curry, crushed bay leaf, etc.).
3. Chicken egg - one piece.
4. Small onion and carrot.

Fry the meat deep-fried, after reaching the half-preparedness, add the carrot and chopped onions, chopped into Korean salad. When the mass is ready, cool it, add the egg and spices, mix thoroughly. Ready to fill the filling in the middle of the pancake, folding it with an envelope, namely, bending the edges from four sides in the middle so that the entire filling was not just covered, but tightly wrapped.

Before serving, the finished stuffed pancakes should be lightly fried again on both sides. Serve to the table with any sauce or sprinkle with chopped greens.
