One can not even point out the century when pancakes appeared on the territory of our country, most likely, even before the very concept of Rus appeared. Many facts speak in favor of the fact that pancakes were a symbol of the sun. And the ancient Slavs worshiped him as a supreme deity. It is not by chance that pancakes were greeted with carnival and at the same time they were a funeral dish. Varieties of pancakes are known to almost all peoples, but none of them puts as much sacred meaning in pancakes as in Russia. According to the etymological dictionary, the word "pancake" comes from the verb grind, that is, something prepared from ground grain, it is likely that here lies the opposition to what is prepared from whole grain, namely porridge.

Traditionally in Russia pancakes were baked from yeast dough. This is their fundamental difference from similar dishes of other peoples. In pancakes you can wrap almost any stuffing. Pancakes with cabbage can not be good, they combine a delicate sweet taste of a pancake with a sweet-sour slightly savory taste of fried cabbage with an egg. They can be fried in butter and served to the table, a bay of sour cream, - a taste of unearthly!

In order to cook pancakes with cabbage, the recipe offers the following list of necessary products.

Flour, eggs - 2 pieces, milk (you can have plain water), yeast, sugar (spoon), salt to taste, hydrated soda.

While the dough is suitable, let's deal with the filling. Cut cabbage, salt and let it stand. Heat the frying pan, put the fat and add a little sugar. Cut cabbage and remove excess juice. Put it in a frying pan, add finely chopped onions, pepper. Cover with a lid and stew until it becomes golden brown. Boil the hard-boiled eggs, cool, cut and mix with cabbage. The filling is ready. Now it must be cooled to room temperature.

The dough is ready, you can bake pancakes with cabbage. The frying pan is heated so that the drop of water does not spread, but rolls over the surface. To ensure that the first pancake did not turn out to be a lump, pour salt on the pan. After a few minutes, we remove the salt and pour the oil. You can start frying. When all the pancakes are ready - we fill them with cabbage. Pancakes with cabbage are served to the table with sour cream.

Pancakes with cabbage are made from unleavened dough. There are many recipes for their preparation. Here's one of them. We divide the eggs into squirrels and yolks. Yolks grind with sugar. We put it into a saucepan, add a glass of soda water and flour, mix thoroughly, but carefully, so that the gas does not come out of the water. Now whisk the whites and add them to the dough. The dough should have a kefir consistency. We regulate it by pouring water or pouring in flour.

Preheat the frying pan, as when cooking pancakes. Lubricate it with oil, you can do it with a piece of raw potato on the fork. We immerse it in the oil and quickly lubricate the frying pan. Pour the dough ladle, its amount is calculated by experience. Some recipes suggest pouring stuffing directly into the dough, in this case the pancakes turn out to be thick and not quite fried inside. But, it's a matter of taste.
