Meatloaf

Dish from a slice of meat, on which the filling is laid, and it is rolled up with a tube, has a long history: it is mentioned in the fifth century in culinary recipes of Ancient Rome. Today this dish can be called universal, and a huge number of recipes differ from one another in the type of meat, stuffing and cooking technology. Meatloaf is prepared from lamb, pork, beef, poultry.

Supplement the taste with various seasonings, sauces and spices. Some recipes use bacon strips. Meatloaf can be filled with cheese, herbs, mushrooms, minced meat, vegetables, eggs or a combination of these ingredients. Minced meat can be mixed with a binder: eggs and breadcrumbs, bread pieces soaked in milk (or red wine, or other liquid), it can be added chopped nuts or oatmeal.

The dish can be of different sizes and shapes. Small rolls and large rolls, fastened with skewers, tied with a thread or shaped like a loaf of bread and placed in a baking dish. There are no solid standards for heat treatment. Meatloaf can be cooked in the oven, in a microwave oven, fry in a pan or in a saucepan.

Recipe 1

This meat roll requires time and some effort, but as a result you will get a very tasty dish that will become a real decoration of the festive table. Ingredients:

  • 0,8 kg of veal (cutting is washed with cold water and cut into two equal layers, beat off);
  • 50 g of bacon;
  • 100 g of ham;
  • 2 tablespoons buttery butter;
  • 2 cucumber pickles (peel off, squeeze out excess liquid and cut into very small pieces);
  • water;
  • pepper;
  • salt.

For omelets:

  • 3 tablespoons of milk;
  • 3 eggs;
  • ½ tablespoon buttery butter;
  • salt.

Each layer of veal is salted, peppered. Prepare the omelette: beat the eggs and milk until lush foam, add salt and whip a little more. Toast in a frying pan with melted butter, set aside to make the omelet cool. Lay out a layer of meat, spread on it thin slices of bacon and ham. From above distribute an omelette, sprinkle it finely chopped cucumbers. Cover the second layer of veal, fold tight roll and tie with thread. Lay the roll into a saucepan with the oil warmed, on both sides fry to a crust of golden brown color. Reduce the heat, pour out the allocated meat juices and a little water. Bake in a preheated oven at 180C for an hour or a half. With the finished rolls remove the thread, spread on a dish, cut and served to the table.

Recipe 2

Prepare a meatloaf from pork. Ingredients:

  • 0.8 kg of pork tenderloin;
  • ½ cup walnuts, cut each core into approximately 8 pieces;
  • 1 cup thin prunes (choose unsweetened and pitted).

For sauce:

  • 3 tablespoons of tea mustard;
  • 1 cup of sour cream;
  • 1 tablespoon of tea salt.

Prunes are well washed and poured with boiling water for swelling. Meat is cut across the fibers into several plates, beaten and overlapped: a large formation should form. Places with a double layer of meat once again beat. Mix the ingredients for the sauce. Most of his hands rubbed into meat. Water from prunes is drained and set aside, prunes are put in a blender and ground, 2 tablespoons of water are added, in which the prunes were soaked. Stir until homogeneous, distribute evenly over the entire surface of the meat stratum. Put pieces of nuts on top. Fold the meat into a roll. A sheet of foil is smeared with a sauce and a roll is placed on it (the joint must be at the bottom), onto which the remains of the sauce are poured. Raise the edges of the foil and fix them sealed, between the roll and foil leave an air cushion. Put aside the baking sheet with the roll for about 30 minutes. Preheat the oven to 220 ° C, roulette an hour. Open the foil, increase the heating to 250C and bake another 5 minutes. After the meat is covered with crust, the meatloaf is transferred to a dish and covered with foil. Serve in cold or hot.

Recipe 3

You can cook meat rolls with mushrooms from pork. Ingredients:

  • 0.5 kg of pork tenderloin is washed, dried and cut across the fibers into 10 plastics, beaten;
  • 100 g of Parmesan cheese on grater rubbed;
  • 5 champignons are cut in half;
  • 1 Bulgarian pepper is cleaned, cut into strips;
  • 2 eggs;
  • breadcrumbs;
  • vegetable oil;
  • salt;
  • pepper.

Plastics of pork are salted and peppered. Mushrooms are fried until browned. Pieces of pork are sprinkled with sweet pepper and cheese, in the middle spread on half of the champignon, fold with rolls. Dipped in a whipped egg, breaded in breadcrumbs. 7 minutes fry (before blushing). Then they cook the meat rolls in the oven at 200C until cooked.
