Mashed potatoes soup: simple and gentle

It's no secret that children (and many adults) do not really like eating soups - they always catch something from there, put them on the edges of the plate, in a word - pick them. And to eat all the time in the dry - it's not the same! But there is a wonderful way to make almost any soup - vegetable or other - surprisingly tender, tasty. And, I assure you, this soup for ears will not be dragged away not only by children - you yourself will be happy to eat it!

What is the secret, you ask? And there is no secret - just need to cook soup in the form of puree or, if you want, cream (the only exception is borsch, from my point of view it is inadmissible to turn it into mashed potatoes, not counting toothless kids and those who need to grind any food).

How to make cream soup? Yes, it's easier than that! This is done with a blender in seconds, but if there is not this unit at hand, then the usual sieve will fit, and through it it will be necessary to skip well-digested ingredients (of course, the process will be more laborious, but not in all cases).

I will gladly share some recipes with you.

Potato soup puree

The simplest and most accessible cream soup in the world is potato soup. Variants, how to cook it, weight: it can be purely vegetable (vegetarian, so to speak), and can be cooked on meat or chicken broth. But in any case it will be delicious - that's for sure!

To make potato soup puree you will need: potatoes, onions, carrots, butter, cream, fresh herbs. If you decide to cook on a meat broth, then, you need to pre-cook the meat on a bone or chicken, broth the broth, chop the boiled meat and then set aside (as you will add it to the plates just before serving).

So, if we cook on broth, then peeled and quartered potatoes are cooked in broth until ready, if digested - it does not matter, even better. If you make a soup vegetarian, then potatoes boil in water (do not forget to salt only closer to the middle of cooking). You do not need to pour a lot of soup for the soup: calculate approximately how many portions you need to get at the output, so that in the end your soup does not turn out to be too liquid. Such soups are not cooked for future use, but for a half or two servings for the additive, be sure to count.

While the potatoes are brewed, finely chop the onions, let the carrots pass through the grater, pass them on the butter (you can and on vegetable, if the soup is vegetarian, but on the creamy it will taste better).

After the potatoes are well welded, you can proceed as follows - put it into a blender with a small amount of broth, add the warmed cream (a glass), grind it into the cream, add the onion and carrots, softened in oil, once more turn to a homogeneous creamy puree. If the container in the blender is too small, divide the "dry portion of the soup" (boiled potatoes and vegetables) into two parts and mix with the broth and cream in two sets.

If there is no blender, then it is better to boil the carrots together with the potatoes until they are ready. Dalley take a sieve with a fairly large mesh and well-boiled and already slightly rastolchennye in broth vegetables, wipe with soft onions (all this must be done so that the broth as it filtered through the sieve). Then add cream, stir well - it's ready!

Pour out the mashed potatoes soup on plates, add pieces of meat, fragrant ground pepper. And be sure to sprinkle fresh dill greens from the top and other herbs are loved! The delicious indescribable!

I also recommend that you cook pea soup with smoked soup in the form of cream soup .

Dried peas should be thoroughly rinsed, and soak for several hours, from time to time replacing water. Then, for 45 minutes-an hour to properly boil it in broth, where before cooked smoked pork or beef ribs, or smoked chicken (at the end of cooking throw a bay leaf). Yes, until the peas are thrown, the meat should be taken from the broth, remove from the bones, finely chopped and until later put aside.

Vegetables (onions with carrots) to save on vegetable oil and add to a saucepan with already boiled peas, bring again to a boil. If the peas are boiled very well, it can only be "brushed" it right in the pan. But if you want to get a very homogeneous consistency (just like cream soup), then mix with a blender.

Add in the ready soup pieces of smoked meat and pour over the plates, decorating with dill greens! It's good to add croutons from white bread. The fragrance of this still smoking soup is a messenger! And the taste is unmatched!
