Jambalaya: recipes and cooking features

Treat your family with such a new and original dish as jambalaya. Its recipe is quite simple. The dish was invented in the Caribbean islands. Over time, it gained popularity in Spain and in France.

Today jambalaya is cooked in Russian and Ukrainian restaurants, and all thanks to chef Ilya Lazerson, who first cooked it in Western Ukraine, and then moved to St. Petersburg and there continued to demonstrate their abilities.

Classic Recipe

The main ingredients are rice (2.5 tbsp.), Hot sauce and chicken broth. In one container soak the rump to swell, and in another cook the chicken thighs and wings. Broth (1 liter) you will need later for cooking.

Now cut 250 g of smoked sausage into cubes or slices. Grind the garlic head (5-6 teeth). Cut one onion into half rings. Then heat the frying pan, pour oil (olive or sunflower) into it, lay the smoked sausage cut. You need to fry it for 5 minutes (no more).

Now take the multicolored Bulgarian pepper (2 pcs.) And 1 celery. Cut them into strips or cubes. Place to fried sausage. Stroke a little more (5-7 minutes). Add salt and pepper to taste. If you want, you can add 1 tsp. Oregano and Creole pepper.

Drain the rice and rinse it well. Pour into a saucepan. If there is a cauldron, then it will be more suitable. To the rice, add fried sausage with vegetables and simmer a little (about 5 minutes).

Then in the groats need to pour the chicken broth. Bring to a boil, taste. If necessary, put more salt and pepper. Reduce heat, cover the dish with a lid - and let it simmer until the rice is ready.

At the very end, pour the hot sauce, stir well, and the hot dish can be served to the table.

Jambalaya: recipe with prawns

With seafood, the dish turns out delicious and fragrant. Shrimp gives an original, unforgettable taste. First they need to be cleaned and boiled. While they cool, cook the rest of the food.

Long rice (300 g) put in 1 liter of water for soaking. In the meantime, take two Bulgarian peppers (preferably red and yellow). Clean them and cut them into large cubes. Celery can be cut into strips. Grind one onion.

Then rub 0.5 kg of tomatoes on a large grater. Add 1 hot pepper to them. Seeds do not clean. After all, they are the main acuteness. If you just want a piquant taste, then it's better to clean the pepper.

Now heat the frying pan, pour olive oil into it. Put the onion there, fry until it is clear. Then add shrimp. Slightly fry them. Then put the chopped peppers and celery. Fry for 5 minutes, mix with a wooden spatula. Salt and pepper to taste. Turn off the fire.

While the vegetables were being prepared, the rice brewed. Drain off the water and rinse it to clear water. Rice pour into a saucepan or cauldron, dip fried shrimp with vegetables. Then pour out the tomato juice. Stir and stew for about 10 minutes.

Pour 700 ml of water into the rice. Cover the pan with a lid. Let it all boil for about 20 minutes. During this time the rice should be cooked. When turn off the hotplate, the contents of the cauldron should still be infused for about 30 minutes. You should get a very tasty and original dish with such an interesting name - jambalaya. The recipe for its preparation is very light, but it takes a long time to prepare the products.

Add ham

Try to cook jambalaya with shrimps and sausage. The dish is very tasty, and it's not a shame to serve even guests. Seafood is needed, as in the previous recipe, cleaned and boiled. Just chop the ham, preferably large chunks. For example, circles, squares.

Onions and celery (1 pc.) Must be ground. Garlic (1 head) grate on a fine grater. Tomatoes 400-500 g is best to twist through a meat grinder. But you can grate on a coarse grater.

First fry the onion so that it becomes transparent. Then put the chopped celery. Roast vegetables for 5 minutes. Add the garlic and tomato juice. You can cut small chili peppers finely. He gives the dish a piquancy.

Then 300 grams of rice rinse well, put in a cauldron or pan. Add there fried vegetables with ham and tomato juice. Put the whole together for 10 minutes. Then pour 700 g of water, reduce heat and cook until ready rice. Try to mix as little as possible, so that the groats do not fall apart.

The original dish of jambalaya with shrimps and ham is very tasty and satisfying. You can cook it for your family or for guests. They will appreciate your culinary skills.

Jambalaya: recipe with chicken

This dish is cooked on broth, and there must be a lot of meat in it. To do this, it is better to take a whole house hen. Clean it, wash it and put it on the fire. While the chicken is brewing, take care of the rest of the ingredients.

Prepare 1 large onion, Bulgarian pepper (2 pcs.), 0.5 kg of tomatoes, rice (300 g), celery, 1 head of garlic, hot pepper (1 pc.), Spices and salt.

Chop onion, fry until it becomes clear. Then put the chopped celery and pepper into the pan. Vegetables fry for no more than 5 minutes. Then put the chopped garlic and chopped tomatoes (you can rub on grater). Add a little dry ginger, 1 tsp. Oregano and to taste salt and a mixture of peppers.

When the chicken is cooked, cool it and remove the meat from the bones. Put in a pot, cauldron or a scallop. It is important that the tank has a thick bottom. Here, strain the chicken broth and lay the fried vegetables with spices.

Put the saucepan on a slow fire. When the soup boils, taste it. You may need to add salt or pepper.

When rice is ready, you can clean the cauldron from the hotplate. Let the dish is infused for 30 minutes - and can be served to the table.

Features of preparation

The famous chef Ilya Lazerson discovered several secrets about how to cook jambalaya properly. He claims that the taste of the dish depends on the fried vegetables, to which the necessary spices and seasonings are added.

To make the rice friable and whole, do not stir it while cooking. In order not to burn the croup, it is better to prepare a dish in a cauldron or a thick-bottomed uterus.

If you still need to mix rice, you need to do this with special care. Take the wooden spatula and turn the cereal from the bottom up. Then the probability that the rice will fall apart will be minimized.

The recipe (jambalaya) from Lazerson is very simple. It does not need special, expensive ingredients, but the taste of the dish turns out exquisite, spicy and unforgettable.
