Is it possible to prepare compote from apricots for the winter without sterilization? Use one of two methods

The most reliable method of preserving any fruit, be it vegetables, berries or fruits, is considered sterilization - heat treatment by immersing the food-filled cans in hot water and heating for some time. The appearance of the fruit remains almost unchanged: the skin does not burst, the shape does not deform, all components remain intact and beautiful. But it may not be very convenient to close large glass containers, especially compotes, in which the proportion of fruit compared to the total volume of liquid is small. What is the simplest and most convenient way to get completely ready-to-drink beverages that do not require further consistency by diluting with water? For example, you can easily prepare compote from apricots for the winter without sterilization. This article describes two possible ways. Following any of them, you will get the most delicious and pulp-rich fruit drinks.

Compote of apricots without sterilization can be closed in two ways

The first option is to pour the fruit with hot liquid several times in a row, draining it and heating it again. Sugar usually falls asleep during the last stage.

The second option is similar to the preparation of compote according to the "summer" recipe. This means that the technology is based on cooking a beverage that is completely ready for use and does not require further heat treatment. Hot saturated fruit mixture is poured into cans and rolled up. This compote of apricots for the winter without sterilization is more like a juice with pulp. Let us describe in more detail each of the proposed options.

Compote of apricots for the winter without sterilization: recipe first

Fruits should be taken dense and not over-ripe. Wash them and free them from the stone. Very large can be cut into quarters. In each three-liter jar, put 7-8 medium apricots. The container should be filled with fruit by about ¼ piece. Fill neatly boiling water so that the glass does not burst. Cover the jar with a lid and leave to "steamed" for 10-15 minutes. Then through a special device with holes that tightly clings to the neck, drain the liquid back into the pan. Boil the solution and refill in cans. After 15-20 minutes, repeat the step of removing the liquid from the cans. In a rich fruit broth, pour the sugar (for one three-liter jar of water - 1 full with a top of a glass of sugar). Fill the boiled syrup in a container and roll it. Then turn the container around and wrap it in a blanket until it cools down.

Compote of apricots for the winter without sterilization: the second recipe

In boiling water, place the prepared pieces of apricots and sugar to taste. Allow to leave the compote for 10-12 minutes. You can add other vegetables and berries. Pour the rich mixture together with the pulp to the jars and cover them with covers.

If your goal is a beautiful dessert of whole fruits, then you should not prepare apricot compote without sterilization.
