How to prepare a gentle sauce from an avocado?

To prepare the sauce from the avocado, you need, actually, the fruit itself, shallots, two peppers Serrano, lemon juice, fresh coriander, olive oil, pepper and salt. If you want to get a less tangy sauce, you can use 1 hot pepper. Prepare the ingredients, peel the avocado, remove the stone and spoon gather the pulp into a blender. It is easy to prepare and paste from the avocado. To do this, you need to peel the ripe fruit and grate the flesh on a large grater, sprinkle with lemon or lime juice, add salt and pepper and mix the mass carefully with a fork until a uniform consistency is obtained. In such a paste, you can add garlic, onion, hard boiled egg and mayonnaise. Serve with fresh wheat or rye bread. It is perfect with chips and chicken meat. But, unlike the sauce, the paste becomes darker during long storage and loses its taste.

Avocados can be served not only for snacks. He is perfect for dessert. Prepare air mousse from avocado and you will be convinced of it. For its preparation, mix avocado with a mixer, add milk, sugar, vanillin and mix until a homogeneous mass is obtained. Cool for 20 minutes and serve to the table. Or mix avocado with lemon juice, sugar and 2/3 cup boiled chilled water until one mousse is obtained, put into glasses and put in a refrigerator for several hours. Before serving, decorate each serving of mousse with whipped cream and strawberries.

The greatest secret of a good avocado sauce is a really good fruit. Choose a ripe avocado, soft. It should have a mucous texture, and in consistence resemble butter at room temperature. If the fruit is hard, it should be wrapped in paper or foil and put in a dark place for 2-3 days for ripening.
