How to cook strawberry jam in a multivariate?

This summer, so untypical for the south of Ukraine, pampers us with rains and cool weather. And this means that we are expecting a harvest of strawberries. It is already sold in the markets quite inexpensively. Is this not an excuse to make a delicious strawberry jam?

Let's start with the preparation of lids and dishes. We need jars with twisting metal lids. These are now sold in any large supermarket. And of course, a small volume - 250-300 ml, because strawberries - not a product to close it with liter banks. Strawberry jam or jam is a delicacy, so the packaging should be appropriate.

Prepare 10 pieces of 250-gram jars of strawberry jam in the multivark. To do this, we need 1.5 kg strawberries (I advise you to take select, beautiful berries, even if they cost more). In winter, all the same, our homemade jam will be very economical in comparison with the store jams. Soft, spoiled, unripe berries discarded, they can interfere with the normal storage of the product.

Next, we need 1.5 kg of granulated sugar, half a glass of lemon juice and 1 packet of pectin (30 g). Well, of course, a multivar.

Strawberry jam in the multivark cook very comfortable, do not have to stand over the basin with berries, constantly stir and watch so that the product is not burned. With the multivark, we are spared from such problems. The only thing that does not quite suit is the absence of evaporation during cooking. Because of this, jam from strawberries in the multivark is obtained more vigorously than we are used to. We will eliminate this problem with the help of pectin.

Pectin is a natural natural thickener, which is made from apples. It is sold in large stores and supermarkets in grocery departments along with spices and other similar products. If there is no pectin powder, you can replace it with natural gelatin in a small amount.

So, if you are stocked with everything you need, we begin to prepare our jam from the strawberry in the multivark.

Strawberry in the running water and remove the tails. We spread it on a sieve, letting it drain and a little dry.

All berries, except for the smallest, are cut into pieces. Pour the strawberries and sugar into the bowl of the multivark and gently mix the plastic or wooden spatula.

We leave the berries with sugar to stand for 2 hours, during this time they will start the juice and you can start cooking jam.

While the strawberry is infused, we sterilize the jars, after washing them with baking soda in running water.

For sterilization, take a capacious pan, place a mesh or stand on the bottom of it to prevent the jars from touching the bottom of the pan. Pour water into the pan and drown in it the jars to be sterilized, along with the lids.

Bring the water to a boil, reduce the heat and boil the jars for 4-5 minutes. Turn off the heat and leave the cans in the water before using them.

After 2 hours you can put the bowl multivark in the machine, close the lid and turn on the program "Quenching" for an hour and a half. Open and stir jam is not necessary. Although, if you are tormented by curiosity, what is going on under the lid is there, you can open it and look - it does not hurt to do it.

Pectic powder diluted in ½ cup of cold water, pour into a small scoop and bring to a boil.

5 minutes before the end of the program open the multivark and pour into the jam pectin and lemon juice. Stir and cook for another 5 minutes - until the end of the program.

Take the jars out of your sterilizer, allow them to drain a little and spoon the jam into each jar. Do not be embarrassed if the jam seems liquid to you: it will thicken as you cool down. Wipe the outside of the mouth of each jar with a napkin and tighten the lid tightly.

Turn the jars with jam upside down and cover them with a terry towel for slower cooling. Leave them in this position until they cool down completely. And then send it to the store for storage. At moderate temperatures, they can be stored for a year or more. But, I think, you will not have to keep them for a year, because strawberry jam is the most delicious delicacy!
