How to cook lean bean soup? Recipes

Bean soup is an ideal solution for diversifying your menu during the great Orthodox holidays. To prepare this dish, you can use green string beans, dried beans or canned white and red beans.

Bean soup with cabbage

This dish turns out to be incredibly fragrant, useful and satisfying. It tastes slightly like the borsch, which is loved by many. Therefore, even those people who do not really like the specific smell of cauliflower can taste it. It is practically not felt here, but the benefits of it are enormous. You can cook lean bean soup with cauliflower for 2-3 days, because after standing, it becomes only more delicious.

Soup products

The following ingredients will be needed:

  • White beans - 190 g (glass without top);
  • Carrots - 1 piece;
  • Sweet pepper - 1 pc .;
  • Forks of cauliflower - 250 g;
  • Ripe tomatoes - 3 pcs .;
  • Potatoes - 4 pcs .;
  • Onions - 1 head;
  • Mixture of peppers;
  • salt;
  • nutmeg;
  • curry;
  • Refined oil - 30 ml.

How to cook?

Any bean soup - lean (the recipe below), with smoked or chicken - begins with the preparation of the main component - beans. To make it better boiled, it is pre-soaked in cold water for at least 3-4 hours, and preferably at night. After in a pan pour a couple of liters of water, add beans, a pinch of salt and put on the fire. Beans are cooked for about 1.5 hours. In order not to waste time, prepare vegetables. Potatoes are cut into cubes, poured with water, slightly salted and cooked until half-ready.

In a frying pan pour vegetable oil, warm it and spread chopped onion. Fry until the transparency and add crushed carrots on an average grater. A few minutes later put the crushed Bulgarian pepper. When vegetables are slightly fried, sprinkle with spices, mix and add grated tomatoes or tomato juice. Leave to languish 5-6 minutes. Next, put the prepared potato together with the water in which it was cooked. Add the inflorescence of cauliflower and cover with a lid. Continue to simmer until the vegetables are ready. In a saucepan with a ready bean add water, give a boil and spread the vegetable mass. If necessary, a little more salt, bring to a boil and turn off. Insist 10-20 minutes. Serve lean bean soup in a hot form, sprinkled with chopped herbs. If this does not contradict the fasting rules, you can add a spoonful of sour cream. Bon Appetit!

Bean soup in a multivark

To cook this dish in the multivark is a pleasure: the water does not boil away, the beans are not digested, nothing burns. The soup is rich and aromatic.

Ingredients:

  • Red beans - 190 g;
  • Carrots and onions - 1 pc .;
  • Refined oil - 30-40 ml;
  • Potatoes - 3-4 pieces;
  • spice;
  • Boiled egg - if desired.

Preparation of soup

This lean bean soup, as well as the previous one, begins to cook with the preparation of beans. You can do this in a multivarquet, putting out the program "Quenching", or, to make it easier, to boil it in advance on the stove. To make lean soup more saturated, it is prepared for it. For this, refined vegetable oil is poured into the cup of the multivarka (the most delicious is obtained on corn), add a little grated carrot, chopped onions and display the program "Baking" for 20 minutes on the multivark display. Vegetables are fried for 7-10 minutes, stirring occasionally so that they do not burn. During this time, prepare potatoes and the rest of the carrots (clean, wash and cut into cubes). Add them to the bowl of the multivark when the refueling is ready. There also spread the soaked beans. Add a couple of liters of water and put on the "Quenching" mode. It is automatically set for 2 hours, but for making soup there will be enough 1.5. 10 minutes before the end of the preparation, add spices, herbs to the soup, and, if this does not contradict the fasting rules, grate the boiled egg. Quick Canned Bean Soup

This recipe will be relevant when there is not enough time, and you need to cook dinner. In a saucepan pour 2 liters of water, add the randomly sliced potatoes, about 4-5 pieces. While she is cooking, prepare the gas station. For this, onions and carrots are cleaned, washed and crushed. Ripe tomato is covered with boiling water and is released from the skin. After that, too, finely cut or rubbed on the grater. Open the jar with any canned beans, drain the liquid, and wash the beans under running water. Pour refined vegetable oil into a frying pan, warm it and add onions. When it becomes transparent, spread the carrots, fry another couple of minutes and add the chopped tomato. Fry for another 5 minutes. After all the vegetables have been cooked, put the prepared beans in a frying pan, warm for 3-4 minutes and remove from heat. When the potatoes are cooked, pour the contents of the frying pan (onions + carrots + beans) into a pan, give a boil, add spices, salt. Boil a couple of minutes, after which they put chopped greens and turn off the fire. Give a little brew. All, literally half an hour, and a satisfying first course is ready.
