Dogwood jam: cooking recipe and useful properties

Many people know the taste of apple or raspberry jam, because such kinds of berries and fruits can be found almost everywhere. And often I want to try something new, like, for example, dogwood jam. The recipe for this food was known to the people of Transcaucasia, and, in principle, it is not particularly difficult. Let's consider the basic moments of preparation.

In the wild, this plant grows in the warm regions of the Crimea and Transcaucasia, and is also widely cultivated in countries such as France, Russia, Italy, Ukraine and others. This berry is popular due to the large content of substances necessary for the body. So, dogwood has various organic acids, pectins, phytoncides and minerals as constituents. And the content of vitamin C in the berries of this plant is many times greater compared to the currant. In this case, dogwood jam (the recipe of preparation can be found below) does not lose the useful qualities of "raw materials", as the medium (sugar) and technology allow preserving all the substances contained in the fruits without destruction.

Known folk methods of treatment of various ailments with the use of berries of this plant, therefore their use is often recommended for such diseases as eczema, gout, dysentery, inflammation of the gastrointestinal tract, venous insufficiency and others.

Ways to prepare

Dogwood jam (the recipe is designed for one part of fruit and one and a half of the same amount of sugar) can be prepared as follows:

  1. Prepare berries: wash, remove all unnecessary (stems and leaves).
  2. Combine the fruit with the sugar and leave until the juice is released (about 8 hours).
  3. Add potable water to the sugar-coated berries (300 ml) and put on the stove.
  4. Cook should be on a moderate fire with a constant shake (it is better not to interfere with the spoon, as this can damage the thin shell of berries). Warm up until the sugar dissolves, under this temperature regime, then increase the heat and let it simmer (about 5 minutes), then remove it from the plate.
  5. Jam should stand (about 8 hours), then again you need to conduct thermal procedures. In this case, the mass should boil for about 15 minutes.
  6. To lay out the dogwood jam (the recipe, as you can see, is quite simple) according to the pre-prepared containers and rolled up.

Another method of preparing this treat is known, the main points of which are presented below:

  1. Prepare berries (1 kg). Clean, peel and rinse the fruit. After that, they need to be placed in hot water (about 85 ° C) and blanched for several minutes (about 5). Then throw the mass in a colander.
  2. Prepare the syrup. For this, sugar (slightly more than 1 kg) is dissolved in the fire with the addition of water (about 300 ml).
  3. Lay out the cornelian (the recipes of which are different) in hot syrup and leave to soak for a while (about 4 hours).
  4. Boil for about 4 minutes, making sure that it does not burn.

Dogwood jam (useful properties of berries were considered above) has a special sweet-sour taste. This refreshment can decorate the table on holidays, and, in addition, it can be used in the preparation of pies, cakes, as well as lubricate the meat for baking, while it turns out an unusual taste of food.
