Delicious pies with cabbage, fried in a frying pan

Many believe that pies with cabbage, fried in a frying pan - this is a native Russian dish. And really, most people like this pastry. However, in order that they melt in your mouth, you need to try a little, and also observe simple rules.

The dough can be taken with the addition of yeast and without them. In the first case, finished products are more magnificent. However, the dough, prepared without yeast, takes much less time to prepare.

So, to make a dough for fried patties with cabbage, the recipe will be as follows. Two eggs, a glass of sugar, half-packs of margarine, half a liter of milk and about a kilogram of flour are taken for one bag of dry yeast . Yeast is diluted in warmed up a small amount of milk and add half the norm of sugar. Egg yolks are driven into a deep pan, the proteins are then covered with the remaining sugar and placed in the refrigerator. To the yolks are added diluted yeast, leftover milk, salt, softened margarine. In the resulting mass, flour is poured in such a way that a liquid dough is obtained, approximately like a pancake. This odor is left at night in a warm place (you can less, but the minimum it should stand for - 6 hours). After that, the whipped proteins and a little vegetable oil are added to the raised mass. Gradually the remaining flour is poured. The dough is stirred until it ceases to stick to the hands.

Another dough, which perfectly fits pies with cabbage, fried in a frying pan, is prepared as follows. A packet of margarine melts on the fire, 250 ml of kefir and 1 egg are added here. All is carefully mixed, after which flour is poured. It is not recommended to make both too steep dough, and too soft. It should not stick to hands or dishes.

The prepared dough is divided into several parts and rolled out not too thinly. In its middle, the filling is laid out, and the edges are spliced well. The form of baking can be any, from round to oblong. However, you should not make pastries too big in size, as in this case the patties may turn rosy, but not completely bake.

For the filling is most often fresh cabbage. It is either finely shredded and stewed for a while in vegetable oil with the addition of tomato paste, or put in fresh baked goods. However, you can cook pies with sauerkraut, fried in a frying pan. In this case, the filling is lightly fried and sprinkled with lemon juice. You can also add it with mashed potatoes or fried onions.

In the filling you can optionally add additional ingredients, for example, cut into small pieces of sausage, carrots, boiled eggs and much more. This will diversify the taste of baking. So, one of the options of the filling can be the following. Carrots, onions and cabbage are chopped and fried. It also adds a little tomato, and all this is stewed for a while. In parallel, eggs are boiled, which are cleaned and finely chopped. The ingredients are combined and thoroughly mixed.

Traditionally, sunflower oil is used for frying, however pies with cabbage fried in corn or olive oil will be no less tasty. Before you spread pies on the pan, the oil should be warmed up well. This pastry is cooked on medium heat until golden color is obtained from both sides. Serve pies recommended with sour cream.

It should be noted that when preparing pies with cabbage, fried in a frying pan, you must immediately tune in to the fact that this process is not fast, especially if yeast dough is chosen. But the resulting soft air baking is worth it to be patient and get ready to cook it.
