Delicious homemade billets: we make vegetables for winter

Among all sorts of home spins, special popularity among housewives is gained by all sorts of vegetable assortments. They are perfectly used as salads, snacks, dressings for soups and borscht, ingredients for stew and roast. How to stock up with these convenient and useful supplies, read below!

Bulgarian pepper with herbs

Such a vegetable assortment, prepared for winter, is first of all suitable for preparing borscht and soup, and second dishes. It consists of Bulgarian pepper, celery roots, parsnip and parsley, green fennel branches and the same parsley. For every 1 kg of the main vegetable is a half-kilogram of additional components. From the same calculation is laid down by the recipe salt: 300-350 g. The vegetable assortment for the winter is prepared as follows: all the ingredients are washed, cleaned. Pepper chop fine chopped straw. Root for half an hour put in cold water, rinse again and cut the same way. Cut the greenery into pieces. Put everything in a wide bowl, pour in salt, mix thoroughly. Leave for 20 minutes to soak the ingredients with salt and juices each other. A bowl a couple of times shake: you do not just a vegetable assortment - for the winter, and it is important that the products are evenly distributed and soaked in preservative. Now pack the mixture in cans, preferably 250-500 g. From above, over the lid, fill another tablespoon of salt - so the assortment will be better preserved. Cover with nylon lids and put in a cool, dry place.

Acute mixture of pepper and tomato

A wonderful vegetable assortment (for winter made, and not only) came to us from the Bulgarian cuisine. It is also great for refueling, but it can be used as an independent dish: it's a variant of adzhika, caviar, etc. Sharp, piquant, this mixture of fruits and greens will taste to many lovers of appetizing snacks and will not only help a great host! At home, Bulgarians call "lyutenitsami" similar dishes and pass from generation to generation their recipes. For the winter, the vegetable assortment is made from a large amount of sweet pepper, mostly red (75-80% of the total weight of all components), tomatoes taken in smaller proportions (25-20%), several pods of bitter pepper, garlic, 100 g of sunflower Oil, sugar and salt (15 g each). The consumption of products is indicated in the recipe for 1 kg of vegetables. How much more will you take them, as well as oils, sugars, etc. The composition of the dish includes greenery - by eye. Both types of pepper wash, peel off the seeds, cut into slices. Cut the tomatoes into slices. Greens, chop too small. Pour the mixture into a pot, cook over medium heat for 20 minutes, only stir. Separately, heat oil and pour into vegetables, add sugar and salt. Leave to boil for another 20-25 minutes, and then distribute to sterile jars. Boil them in a water bath: liter - half an hour, 0.5 liters - up to 25 minutes. Roll, turn, cover, let cool. The tomato hot mixture is ready!

Salad «Assorted delicious»

Very pleasant and useful it turns out you have from carrots, onions and peppers vegetable assortment. For the winter (photos attached) prepared, it will become just an invaluable treasure of vitamins and will be eaten with pleasure by your household. Ingredients: blue, tomatoes, bell peppers, onions, carrots. Each type of vegetables take a kilogram. But, in principle, if you have something more, and something less - nothing terrible. On that, it is assorted, so that you can combine. Additional ingredients: garlic - 2-3 heads, herbs (parsley, dill) - 100 g, vinegar (6%) - 200 g, vegetable oil - half liter. Salt is added to taste. If you want to make a salad full of sour-sweet, put some sugar. All the vegetables cut into neat pieces, put them in cast iron, pour in oils and stew for 40 minutes. In the middle of the process, add chopped garlic, salt, greens (and sugar) to the mixture. In a hot form, pack assorted in liter jars. In each pour vinegar (a tablespoon, full) and roll. Turn the banks, wrap them around, let them stay there for 24 hours.
