Cooking tiramisu cake at home
Prepare a real cake tiramisu at home is almost impossible. Unless, of course, you do not live in Italy. The fact is that outside Italy it is difficult to find the basic ingredients of this delicious dessert. First of all, we are talking about mascarpone cheese, which is made from cream and has a 55% fat content. It is produced only on the Apennine peninsula. Mascarpone - something in between a very thick sour cream and butter. For the preparation of tiramisu, this cheese must be fresh, so when you see it on the store counter (which is an unattainable luxury for the inhabitants of provincial cities), pay attention to the freshness of the product.
Of course, unwilling to reconcile with this course of events, many culinary experts are trying to find an alternative to mascarpone, cream, fatty sour cream, processed cheese, etc. are used. Agree that it is not always possible to find an equivalent replacement for this or that product. And this is exactly the case.
But even on condition that real tiramisu can be tried only in Italy, many people, delighted with the taste of this dessert, are asking themselves: how to cook tiramisu at home?
Let's agree that we will not deceive our loved ones, let alone ourselves, and prepare cakes for a la tiramisu, that is, variants of an amazing, delicate and exquisite Italian dessert. And the recipe for making a tiramisu cake of a classic pattern will be left to the Italian chefs.
So, we are preparing a dessert a la cake tiramisu at home.
You can take the classic recipe for tiramisu and follow it, replacing mascarpone cheese with cream and cottage cheese with a high percentage of fat; Wine Marsalu - liqueur or cognac (suitable, for example, Amaretto); Cookies Savoyardi - biscuit cakes.
Secrets of cooking products, "duplicates": Savoyardi's cookies can be replaced with an ordinary sponge cake or biscuit. Cheese mascarpone can be replaced with other cream cheese (for example, "Philadelphia"), whipped cream with curd pasta, soft melted cheese, or you can make something like mascarpone. We take sour cream (fat content from 30%, taste is not sour!), Spread on gauze, folded in three layers, we tie gauze and hang it for the night. So all the water contained in sour cream, will drain, and there will remain a creamy thick mass, similar to mascarpone. Of course, all this is not identical to the natural ingredients of Italian dessert.
You can use non-classical recipes, of which there are a great many.
Here, for example, one of them. Cake Tiramisu (homemade cooked). Necessary components: fatty cottage cheese (250 grams), egg yolks (3 pieces), sugar (75 grams), instant coffee (3 teaspoons), biscuit biscuits, best in the form of chopsticks (120 grams), cocoa (tablespoon) and Brandy (four tablespoons).
Pour the indicated amount of coffee with boiling water (two hundred milliliters), after it has cooled, pour brandy into the coffee. It is better that the liquid is not in a mug, but in a bowl, so it is more convenient. Yolks and sugar to whip and gradually enter into this mixture of cottage cheese, constantly stirring, should get a uniform consistency.
Take a deep form (preferably rectangular) and, quickly dipping the cookies into the coffee liquid, lay it on the bottom of the mold, tight enough in relation to each other. Top with a layer of cream and gently trim. With the remaining ingredients, repeat the procedure described, alternating the layer of cookies and the layer of cream. The last layer is cream-smooth. The form is covered with a film and put in the fridge for impregnation. Before serving, sprinkle cocoa (mixed with sugar powder).
A little secret: in order to cut a cake beautifully, each time you need to dip a knife in hot water.
Lovers of sweets will certainly appreciate the fruit tiramisu, for the preparation of which you will need:
- Mascarpone or its substitute (150 grams);
- Cream (glass);
- Vanilla sugar (two packets);
- Granulated sugar (tablespoon);
- Raspberries, blueberries (100 grams of each berry);
- Cookies in the form of fingers or tongues (16 pieces);
- Strawberry (200 grams).
Washed and peeled berries dry. Mascarpone put in a bowl, sprinkle with sugar and soften a whisk. Mix the whipped cream with the cheese-sugar mixture. This is a cream that will be covered with cookies.
In the plate (vase) put two cookies, on top - cream, on which we lay berries. This is the first layer of fruit tiramisu, on it we spread the second layer.
So quickly dessert is ready, you can enjoy the fruits of your culinary skills.
Let's say you have the opportunity to get all the necessary ingredients (both real mascarpone, and marsala, and savoyardi). Well, lucky ones, you really can make a real tiramisu cake at home.
Prepare mascarpone cheese (enough 250 grams), four eggs (yolks need to be separated from proteins), strong chilled coffee (125 milliliters), sugar powder (75 grams), savoyardi cookie packing, 75 grams of dark chocolate and sixty milliliters of Marsala, rum or brandy .
First step. Cheese beat whisk to make it soft. Separately whip the yolks and sugar until a white mixture, add the mixture to mascarpone, constantly whisking. Do the same with whipped whites.
Second phase. Combine coffee and Marsala (rum or brandy). In this mixture, dipped half of the Savoyardi portion and put the cookie soaked in the coffee-wine mixture onto the bottom of the mold.
The third stage. Put on the cookie half of the cream, top lay the remaining cookies, also pre-soaked it, top cover with the remaining cream and smoothen.
The fourth stage. Put the form with tiramisu in the refrigerator for at least three hours.
The fifth stage. Before serving, rub the chocolate and sprinkle a cake on it, through a sieve to sift the cocoa.
Secrets of cooking! Cheese mascarpone in no case should be whipped with an electric whisk, otherwise it will turn into a granular mixture. Cookies should be dipped one at a time. Chocolate before you rub it, you need to cool it.
