For cream and cake decorating, prepare cream (with a fat content of at least 35%) - 500 ml, 1 teaspoon gelatin, 100 gr chocolate (dark or milk to your taste), 0.75 cup powder; As well as fruits: 1-2 bananas, canned peaches (1 pot) and 1 piece of kiwi. Also you will need 2 towels and parchment paper.

Prepare a white biscuit: mix the flour with vanilla sugar, starch and baking powder. Yolks are ground with half a glass of sugar, then add the dry mixture with flour and mix until the homogeneous dough turns out. Beat up the proteins to a dense mass and gradually introduce the remaining sugar into them. The resulting mass is gradually combined with the yolks. Place the dough on a baking sheet covered with parchment paper and put in an oven, heated to 180 degrees. Then put the cake on a towel, sprinkled with sugar powder (you can sugar) and quickly roll together with a towel to cool it. Dark cake is prepared similarly, only with the addition of cocoa.

When the cakes cool, they must be deployed, remove the towel and fold already without it - you will get rolls, which need to be cut across for 3 - 4 (according to your desire) part.

To make a syrup you need to mix sugar and water, bring to a boil and after it has cooled, add rum or cognac. Then you need to grate the chocolate, cut the fruit into thin slices. Half of the cream mix and beat with a half of sugar powder.

Then you need to roll up the light rolls, lightly sip the syrup, spread the cream and sprinkle with chocolate. With dark rolls do all the same, but instead of chocolate put the fruit. Further - the most difficult. It is necessary to tightly roll the white roll so that the cream is inside, then wrap it with a dark roll, etc. If you get emptiness somewhere - fill them with fruits.

The remainder of the cream whip with powder and apply to the resulting cake. Then top out the fruit and pour them with a solution of gelatin and apricot syrup. A beautiful fruit cake is ready!
