Nut-apple cake from the "Chadeyki"

This wonderful, juicy cake from Irina Chadeyeva will not leave anyone indifferent. It will require the following products:

For biscuit:

  • Eggs - 6 pieces;
  • Sugar - 200 grams;
  • Ground roasted nuts (any) - 40 grams;
  • Salt - a pinch;
  • Butter (melted and chilled) - 45 grams;
  • Flour - 105 grams;
  • Starch - 45 grams.

Creamy cream:

  • Yolks - 3 pieces;
  • Sugar - 120 grams;
  • Butter - 150 grams;
  • Corn starch - pinch;
  • Milk - 75 ml;
  • Vanilla - to taste;
  • Ground roasted nuts (any) - 40 grams;
  • Aromatic alcohol (ideally calvados, but also cognac) - 2 tbsp. L.

Filling:

  • Apples large - 3 pieces;
  • Sugar (preferably brown) - 40 grams;
  • Butter - 30 grams;
  • Flour - 1.5 tsp. With a hill;
  • Ginger - a large pinch;
  • Cinnamon ground - a large pinch.

Glaze:

  • Powdered sugar - 150 grams;
  • Aromatic alcohol (ideally calvados, but also cognac) - 2 tbsp. Spoons;
  • Lemon juice - 2 tbsp. L.

Decor:

  • Fried and large chopped nuts - 150 grams;
  • 1 cinnamon stick;
  • Raisins - 50 grams;
  • Medium-sized apple - 1 pc.

Preparation

Cake in the autumn style of this number of products will be a diameter of 22-24 cm.

To make a biscuit, first of all, lather the form with parchment and warm up the oven to 180 o C.

Sift the flour with the starch.

Separate the yolks.

Whisk the squirrels with salt until soft foam and, without stopping to beat, start pouring sugar. As a result, you get a strong glossy foam that does not flow out of the bowl, if you tilt it.

Continuing to whisk, add yolks one by one to the whites. Should be a magnificent, slightly yellowish mass.

Add the starch flour and nuts to the whipped egg with sugar, gently spoon the spoon upward to homogeneity. Carefully pour in the oil and mix again.

Place the biscuit dough in a mold, smooth it and put it in a preheated oven.

The finished biscuit has an even, intensely golden color and springs, if you press into its center. Pull it out of the oven and cool it by placing it on the grate upside down.

Chilled sponge cake should be removed from the mold, packed in a food film and allowed to lie down for 6-8 hours. This biscuit is universal: not only the autumn cake, the recipe of which we give, it will be successful with it, if you wish, you can use any fillers to taste - for example, with nuts, chocolate is perfectly combined.

For cream, mix yolks, milk, starch and vanilla. Put on a small fire, bring to a boil and cook for a couple of minutes until thick. Remove the resulting syrup from the fire. Cover with a film to prevent crusting.

Remove the oil from the refrigerator and allow it to soften for an hour. As a result, the temperature of the oil should be the same as the temperature of the syrup.

Whisk the butter and, without turning off the mixer, gradually add the cooled syrup. Should get a thick, glossy and homogeneous cream.

Pour alcohol into the cream and whisk again quickly. Add the nuts and mix until smooth.

For the filling in a dry frying pan, fry the flour until golden. Pour the flour into a separate container.

Apples peel and cut into cubes.

Melt butter in a frying pan, add sugar, ginger with cinnamon and apples. Cook on low heat until the fruit is soft, while maintaining the shape. At this stage, it is necessary to pour in the toasted flour and mix well. Everything, the filling is ready.

For the glaze, mix all the ingredients until smooth and warm up a little.

To decorate the cake, slice the apple in thin slices, put in microwave and cook at maximum power for 3-4 minutes. Sprinkle the chips with cinnamon.

How to collect this autumn cake?

  1. First, cut the sponge cake along into 3 equal parts.
  2. On the bottom layer put the cooled apple stuffing.
  3. Cover and press the second layer of biscuit.
  4. Lubricate the surface of the layer with half the cream. Press it with the third biscuit.
  5. With the remaining cream, grease the autumn cake on the side.
  6. Heated glaze pour on the cake from above, making sure that it does not get on the cream.
  7. Wrap the sides of the cake with chopped nuts.
  8. From above stick apple chips, lay out a stick of cinnamon and raisins.

Before serving, allow the cake to brew for 3-4 hours.

Here, mastic will come to the rescue - a special sugar paste, similar in appearance to plasticine. From it you can dazzle themed decorations and decorate them with an autumn cake, the benefit of this recipe is that the cream is made on the basis of oil, so the mastic does not melt.

And you can buy mastic now in any department for a confectioner. It can be both painted and white. The easiest option is to take the material of white, orange, red and yellow colors. White mastic is thinly rolled out and wrapped with a cake, and the rest of the cut leaves (you can use a special notch or a sharp knife), dazzle the mushrooms and paint them painstakingly, making out an autumn cake.
