For pickling nelma you can use any dishes, except aluminum. It's great if a plastic container with a closing lid is chosen for these purposes. So, we clean fish of fins, bones and entrails. Cut the fillets into small pieces.

Onions are shredded and mixed with vegetable oil and vinegar. The main thing - do not overdo it with the last ingredient, then the fish will be tender and very tasty. Next, slices of nelma sprinkle with salt (about 50 g) and pepper (to taste). Stirring. In this form, the fish should lie about 15 minutes. After this, throw the onion to the fish and mix everything thoroughly. We cover the capacity with a lid and put it in the refrigerator for several hours (4-5).   • Nelma - 2 kg;
  • Carrots - 2-3 pcs .;
  • Onion - 3 pieces;
  • Fresh cucumbers 3 pcs .;
  • Lettuce - 1 piece;
  • Eggs - 4 pieces;
  • greenery;
  • Dry white wine - 750 ml;
  • Pepper (peas).

For sauce:

  • Egg - 1 piece;
  • Cucumber - 1 piece;
  • Egg yolks - 2;
  • Powdered mustard;
  • Sunflower oil - 0, 5 tbsp. L .;
  • Sour cream dense high fat content - 150 ml;
  • Lemon - 0, 5 pieces;
  • Pepper, salt.

Further actions

So, take the pan, pour in 2 liters of water, wine, put on the stove and wait for the boil. Vegetables are washed under running water, cleaned, cut into large pieces and thrown into the water. Next comes large torn greens, pepper (peas) and salt.

Mix the mixture for about 30 minutes on minimum heat (it is necessary that the soup boil slightly). After that, remove the pan from the plate and let the broth cool.

Nelma is cleaned from scales, fins, entrails and thoroughly washed under running water. Filter the broth with gauze. Clean the broth on the stove and throw the fish. After boiling, the fire is reduced to the minimum and cook nelma for 25 minutes. It should be noted that the fish should not boil.

As soon as the nelma is cooked, remove the pan from the plate and let the broth brew for 2-3 hours.

While our broth is infused, prepare the sauce for the fish. To do this, clean the cucumber and three on a grater. We place the contents in gauze and squeeze the cucumber juice. One egg cook to a steep condition, we separate the yolk and mix it with 2 raw yolks. Then add mustard, oil, pepper, salt. As soon as a homogeneous mass is obtained, add the sour cream, lemon juice and the remaining flesh from the cucumber. Stirring.

From the remaining cucumbers, using a small spoon with cutting ends, we cut out the insides in the form of small balls. We lower them into hot salted water for half a minute and throw it back in a colander. There we also send the finished nelma. In the meantime, we will cook the remaining hard-boiled eggs.

In the plate we spread the washed and dried leaves of lettuce, we place our fish on top, around us we have cucumber balls and eggs cut into slices. In a separate bowl we serve sauce.
