The sphere of public catering is actively developing. Optimistic looks at the situation and Alexei Nemeryuk, head of the Moscow department of trade and services. According to him, now the number of restaurants in the city is growing, and at a high rate: every month 40-50 points of the public catering are added. Since the beginning of the year, they have already opened about 300.

What is the reason for the recovery? First, the development of this segment of the market is associated with an increase in the activity of Moscow's cultural life. In the metropolis, numerous events take place every day, attracting a large number of visitors to exhibitions, festivals, performances, after which people go snack. Secondly, today there is a certain drop in prices for rental of premises, which opens up access to business for those who previously did not have the financial opportunity to start their business.

The lower the amount indicated in the average check, the more the institution depends on pedestrian traffic. Consequently, stationary fast-food restaurants and simple restaurants with service are better located at the metro or in large shopping centers. However, the principle of "opening a restaurant where there are many people" does not always work either. It is relevant for institutions with a low check. Their client really does not want to get somewhere far, he wants to save time and appreciates the proximity to the metro, to the house or to work. But with high-level restaurants, designed for elite visitors, not everything is so unambiguous. They are traditionally located in the center, while they do not require proximity to transport hubs and dynamic pedestrian traffic. Family restaurants can be located in the sleeping areas, where a large number of new buildings.

For elite restaurants, the requirement for accommodation at the intersection of pedestrian flows is irrelevant: they should be located in a good area, better in the center.

For high-end cafes, high traffic is very important. And although the cost is very high, a steady flow of customers pays for the rent. The cost of renting a room under a cafe in the crowded Belorusskaya (20 meters from the metro) reaches 3,500,000.

Here, the room area, electric power, availability and condition of engineering communications, water supply systems, sewerage, ventilation, noise insulation need to be used, and much more.
