How to preserve beans at home? Leguminous preparations

People are accustomed from all the gifts of the garden to procure for future use only berries, vegetables and fruits. And what about the rest of the plant cultures: beans, grains and others? After all, they can not only be stored after pre-drying. Many do not even suspect how to conserve beans at home, so that it turns into a useful semi-finished or full-fledged dish.

The simplest version

In its homeland, in Latin America, beans are the most popular product. It is used in a variety of forms almost every day. For us, it is only a side dish, an addition to the main dish. And so that any mistress can always have such an add-on at her hand, one must know how to conserve beans at home. In shops such a product is not cheap. Therefore, it is better to master some simple recipes yourself. The first option is marinating. To begin to understand how to conserve beans at home, you need to prepare the necessary products for this. For each kilogram of beans you need a little more than 3 liters of water, 120 grams of sugar and salt, 3 teaspoons of acetic essence and spices (peppercorns, cloves, bay leaves, coriander and mustard in beans) that are best for this.

The secret of how to preserve beans at home is quite simple:

  1. First, the product must be wetted. If the beans are fresh, then one hour will suffice. If they are dried, it will take a whole night.
  2. After that, the liquid must be drained, and the beans, together with the rest of the ingredients, should be collected in one pan, put it on the fire and bring the contents to a boil.
  3. Then the fire can be made a little less and continue cooking for at least one and a half hours.
  4. Three minutes before the end, add the vinegar.

Now the hot product can be packed, rolled up, and after cooling, safely sent for storage.

An interesting variety

Any product has completely different types and varieties. Their processing and use in cooking can differ from each other. Therefore, you need to additionally know how to preserve asparagus beans at home. Some confuse it with asparagus, which has young shoots for food. Here we are talking about green pods, which are very useful for the body. There are several ways to preserve them. For one of them you will need: 0.5 kilograms of beans, 50 grams of vinegar, fresh dill and parsley, 10 peas of pepper, one and a half grams of horseradish and ground cinnamon, 3 cloves, a tablespoon of sugar and twice the salt.

Now we need to remember the sequence of how to preserve asparagus beans at home:

  1. Washed pods cut into 3 parts.
  2. Lightly fry them on any vegetable oil.
  3. Prepare the marinade. For this, dissolve sugar and salt in a liter of water and boil. After 10 minutes, add the vinegar.
  4. Beans spread on the banks.
  5. Add greens and spices, and then pour marinade.
  6. Banks hold 15 minutes in a water bath under the lid and only after that roll up.

Appetizing mixes

Cooking is known for many options on how to preserve the string bean. At home, you can take the initiative and add, for example, some vegetables. You will need the following ingredients: 3 kilograms of tomatoes, 2 and a half kilograms of beans and bell pepper, 100 grams of salt and vinegar, 3 heads of garlic, and a glass of sugar and olive oil.

The process proceeds in the usual order:

  1. Tomatoes put in boiling water, and then, having peeled off them, grind in a meat grinder.
  2. In the resulting thick juice add salt, vinegar, sugar, butter and grated garlic.
  3. Blend the mixture and cook for 20 minutes.
  4. Beans with pulp of Bulgarian pepper cut into slices and put into tomato composition.
  5. After half an hour, the resulting product is spread over the cans and corked.

Such canned food will be a real find. They can be used daily as a side dish or served on a festive table as a separate dish. In addition, beans with vegetables will be an excellent component for fresh salad, ragout or vegetable soup.

The popular method

Previous versions have one, but a significant drawback. This is vinegar. It is an excellent preservative, but gives the product a special sourness, which is not to everyone's liking. But there are other ways in which this component is missing. For example, you can consider how to preserve red beans at home. In this case, the list of ingredients will be minimal: only 2 kg of fresh beans will need water and 3 tablespoons of salt.

Cooking method:

  1. Fresh fruits must first be filled with water and left in this condition for the whole night.
  2. Then they need to be rinsed well from the formed mucus, put in a pan of cold water and cook for 2 hours with moderate boiling.
  3. As soon as the amount of water is reduced by half, add salt.
  4. Place the hot product together with the liquid in prepared sterile containers, cover with lids, and then warm for another 20 minutes in a water bath.
  5. Banks rolled up and sent to storage after cooling down.
