How to Cook Dessert - Homemade Ice Cream

For many of us, ice cream is one of the favorite treats. However, in our days, on the shelves of shops it is almost impossible to find it without any artificial additives. Even if it is made by a well-known manufacturer that widely advertises its products, this absolutely does not mean that ice cream will be of high quality and will not cause harm. So maybe it's better to make ice cream yourself, with your own hands? The main thing is that the dessert will turn out not only very tasty, but also high-quality.

For this we need:

10% cream - 200ml
30% cream - 300ml
Sugar - 80g
3 egg yolks
Vanilla
Salt (to taste)

Cooking method:

In general, for these purposes it is desirable to use a special ice cream maker, but we will do without it. The secret is that the ingredients at the preparation stage should be as cold as possible and they should be thoroughly whisked constantly.

First of all, we begin to prepare a creamy cream (charlotte). It can be made in two ways: from cream and eggs or from butter, milk and eggs.

For cream we use: 10% cream, egg yolks, salt, 40 g of powdered sugar. Combine the yolks with the sugar powder and whisk thoroughly, you need sugar to completely dissolve. Then add 50g of cream, salt and a little more stirring. The remaining cream is poured into a saucepan and brought to a boil. Then when the cream is a little cool - a small trickle pour mixed yolks, sugar powder and cream. All this must be heated to 80 degrees while whipping. Now, we move this mass to another container, put it in cold water and whisk again, this must be done until the cream cools. After that, we remove it into the freezer.

Next, take the fatty pre-cooled cream, add to them the remains of powdered sugar and start the mixer at low speed, start whipping. In case the cream does not whip well, add a little starch to it.

We take the Charlotte cream from the freezer, add to it freshly whipped cream and mix everything. The mass should be completely homogeneous and rather thick. Again we put it in the freezer. After the ice cream frosts it can be eaten.

This recipe for a simple home ice cream without using an ice cream maker, but if you decide to make your favorite dessert of a higher quality, you still should buy a similar device for these purposes.
